1 Skinless, Bonless Chickenbreast
1 tsp virgin olive oil
2 Lowfat Tortilla Rolls
1 Can Black Beans
2 tsp. BBQ sauce
2 servings mixed veggies (I use cauliflower, brocolli, and carrots)
2 pinches of Cavender's Greek Seasoning
1 small dose of Jack Daniels (*optional)
Slice chicken into small pieces. Cook chicken and mixed veggies over stove w/ virgin olive oil. In seperate pot, cook 1 can black beans, according to can's directions. When chicken is nearly cooked, add pinches of cavender's greek seasoning, and a VERY small amount of Jack Daniels (only if desired). Serve on tortilla roll, and top with light amount of BBQ sauce. Can be eaten as a taco or a burrito.
It's also good w/o the BBQ sauce, if you're very health consious. But, for the adventurious, check the BBQ suace labels at the store, you can find a decent one out there. Plus, you'll be using well below what "One Serving" is typically referred to.
