Stupid question about egg whites

i use the crack in half method and just kinda open it up slowly, moving the yolk from side to side opening the egg more and more until i get all the white out.

I usually have 3 whites and 1 yolk in the morning, using the smallest egg as the yolk.

And is it bad to mix a little 1% milk with the eggs? I just do that to add a little more fluff.
 
Not bad. I used to do that too (the only reason I don't do it now really is out of laziness) though it is a small amount of extra fat that you're adding to the recipe.
