Stupid question about egg whites

I am having troubles sepperating the yolk from the white lol. Is there any sort of special technique? I crack the eggs into a measuring cup and try to take the yolk out with a fork, but it seems to take most of the white with it and sometimes the yolk with break and mess up the whole deal.

Step 1: wash hands
Step 2: crack eggs into bowl
Step 3: use yer fingers like a claw and scoop up each egg yolk and discard

Do it slowly so the thicker egg white that surrounds the yolk can slide through your fingers.
Yes, they do make yolk seperators you can pick up at most retail and gourmet shops, but the fingers method is quick and cheap.

Step 1: wash hands
Step 2: Crack the egg in the middle and pull it apart over top your pan, then some of the white will start coming out and on one half of the egg shell should be the yolk keep tossing the yolk back n forth in the egg shells to get the egg whites out.

Thats what i do. I think its simply. Let me know how it goes.

Josh - if you are eating EW on a regular basis, I might suggest you buy them at your local supermarket. You can get them in pint containers all ready to use. I can't help you on seperating them. I guess just practice :)

I did the crack the egg and toss the yolk deal and it worked well. I didnt know they sold just egg whites, that could come in handy =p

#1 - drive to store
#2 - buy Egg Starts
#3 - save yourself a lot of headaches

shimmering:
1. The majority of the protein in an egg is in the whites
2. All the fat and cholesterol of an egg is in the yolk

Yes the yolk is what contains all the fat and cholesterol in eggs.
Oops, Fil already replied!

I use a couple egg yolks when I have eggs so they cook better, taste better, increase protein and amino acid levels, while still limiting fat.

For baking, you'll want egg yolks. They make your baking more fluffy (with egg whites, your baking will end up being too dense)

why do some people discard the yolk? is it because of the fat in the yolk?
i cant see throwing away food. when i dont want the yolks, i buy the liquid egg whites. i eat 4 whole eggs a day, its good stuff. :)

dam i eat enough meat, and to throw egg yolks into my daily diet on a daily basis would be brutal in the long run, id think. but i guess with all my conditioning it may not matter. egg yolks make up for most the egg taste though

well i started on egg substitutes today, pretty good tasting and W/O all the fat. i kinda feel the same way, feels wrong to throw away food as in tossing the yolks.

Yep. When you buy in a carton, I'm sure the companies aren't going to throw away that golden opportunity (*chortle*). They must sell their yolks to pastry companies that make products that use only yolk.

Try egg whites and you'll see. They taste almost exactly like eggs with yolks (except a little thinner).

yeah the egg substitute i started using today to make an omelete taste's exactly like regular eggs, and it's 99% egg whites.
