Starting over (and over and over)

Got up this morning at 6:50 am *after being up late* to go to aqua fit. It was 45min deep water 45 min chest high. It was very good, but i am soooooo freaking tired.

breakfast: scrambled eggs (the whole egg not just the whites, thought id be an adventurist) lol, 1 piece toast with butter, sauteed zucchini and tomato, cantelope
 

I love buffalo burgers, they have less fat and cholesterol than beef, and are really tasty. I actually buy ground buffalo from a local meat market near my house and used it in a bunch of different ways.
Tomorrow for dinner we are making BBQ'd stuffed peppers with buffalo, rice, and veggies. Its good with any kind of meat or even vegetarian

Mmm You have really yummy dishes!!! I guess that's what happens when you can cook and have a great imagination!! My supper is going to be peanut butter and toast.....yay sarcasmlol durrrrrr.....
 
Yesterday was not too bad of a day for me. Got up and did my aqua fit,
breakfast: mentioned above
Lunch: sushi : veggie roll, spicy tuna roll and miso soup.
Snack: Steamed milk, (while I visited Nan in the hospital)
Dinner: Peppers stuffed with ground buffalo, mush, onion, carrot and a little tiny bit of fetta, We also stuffed a couple of savoy cabbage leaves as well as an experiment..lol. BBQ'd turned out great
had that with a salad
and maybe 2 glasses of wine..lol :D
Snack around 10pm... *wanted chips* had some melon and a big glass of water
 
Today was a busy day, but not too bad... I actually cleaned my car, so that was at least an accomplishment lol. ( Cerella will be shocked, she knows how bad my car gets) lol
Breakfast: Cantelope, banana, and activia yogurt, water
Lunch: chicken fingers, fries and water
Snack: apple
Dinner: Pan fried sole, basmati rice, sauteed peppers, carrots and mushrooms
Salad
water ( I am trying to cut back on the diet pop, so hard)

and LOL re the the car... mine is a disgrace, people are always shocked when it is all clean and sparkly!!!

Hmmmm might have to do it soon, good way to work off some Cals for sure!

Hi Kori, I for sure burned off some calories...lol wow, I always tell myself I will NEVER let it get that bad again.... and then... *POOF!* the damn lil dirt fairy shows up for my car...lol

What's Mush? *Mush Mush that a boy Prancer!! :iamwithstupid: And how do you stuff peppers? What kind of peppers? Bell pepper? Or Hot Peppers? How do you make them? How do you make them without a BBQ?

If you were to write out the recipe....could you uh Dumb it down, really simple steps. One day I wish upon a star to get my very own Buffalo & Elk Burger....I wonder what that would taste like as a Sloppy Joe.

OK.... Mush...is my lazy way of typing mushrooms...lol
Peppers: I use bell peppers... If you like spicy, you can use other hotter peppers if you like. Im not a huge spicy hot fan...like it a little..but my tummy doesn't...lol
How to stuff the peppers: You can either cut around the top of the pepper and pull out all of the seeds. Then you stuff the whole pepper. OR, you can cut the pepper in half (lengthwise) and pull out the seeds and membrane. Then you stuff each side
Stuffing: There are soooo many options... Dumbing it down... lol... you can make it as simple as you like, cooked meat either ground or chopped (leftover chicken works great too or cooked shrimp/prawns) I have used almost every veggie possible. If i use ground meat I like to use veggies like, mushrooms (aka: mush :) ) Onions, spinach, zucchini. (this is great with a bit of fetta cheese or cheddar)
Cooked chicken, i use veggies like cooked broccoli, cauliflower, onions, tomato...(really nice with some lower fat aged cheddar grated and mixed with veggies)
Vegetarian: low fat ricotta, cooked spinach, garlic, grated carrot, zucchini and tomatoes
Spices like oregano, basil, cilantro and garlic work well
spray peppers with pam or rub with olive oil and bake in an oven 350 degrees for about 30 min.
Sorry, think i babbled..lol... was that as clear as mud???lol

 
oops.... place peppers in baking dish, *lol* or pan. You can either put them by themselves. or lay them on tomatoes, or tomato sauce. For a more complete meal, you can add cooked rice in with your stuffing and it goes a lot farther. Cover peppers with tinfoil to keep moisture in

I pulled my back early this week, and as a result Ive been walking around like a 90 year old woman (actual, I know a 90 year old woman, and she walks better than me at the moment) :)
So it has felt a bit discouraging because I wasnt able to go to aqua fit monday or tuesday. Dan has been a doll and has been doing all of the cooking for me (he is also trying to be mindful of how I eat, how much oil to use and such) Im still walking slow enough to almost qualify for going backwards, but I do feel Im getting better. I want to do aqua fit on Saturday for sure, But i will probably at least go swimming on Friday, to work myself into it.
Its times like this where I really do feel how much my weight effects my health. Yes, no matter what weight, your back can hurt, but i tell ya, hoisting this belly up from a chair definitely adds strain.

Breakfast: activia yogurt, banana, water
Lunch: veggie sushi combo ( 3 rolls) 1 cookie, coke zero, water

Snack later : have brought an apple, have not had it yet.

Dinner: We are having BBQ turkey burgers (we really need to get our oven fixed) on whole wheat buns. veggies and dip

 
That's grrreat Thanks a Bundle Michelle!! I called this place to ask if they had any Buffalo & Elk Ground meat and they do!! WOOT!! To top that off this magazine I was reading this morning, I even came across a Stuffed Pepper!! It looked awesome!

Thanks for the well wishes...im hoping i feel better soon too..lol. These muscle relaxers kinda knock me on my ass. I sleep great though...lol
 
Sorry to hear you mucked your back up - make sure you rest and get better before jumping back on the exercise. Last thing you want to do is wreck it again. Don't get discouraged or frustrated - the exercise will still be there to get when you are up and about again. :)

Buffalo - it is my favourite meat these days, and pretty easy to get up here in the Cariboo. Local butcher carries it - yeah, it's more expensive, but so much leaner and tastier than beef.
 
I feel ya on the back pain. I tried to show my 13 year old son how to throw a discus back in march (just like I did back in the day) and I gimped around for 5-6 days. This being in my 40s thing sucks
