A friend brought over 3 pounds of spinach.

I don't know what the hell i'm going to do with that much before it goes bad - but it's taking up the whole bottom shelf of my refrigerator.

Bob LOVES Cream of Spinach, does anyone have a really good, but healthier way of making it?

Any other suggestions?
 
I don't have a reciept, but I would try something like silken tofu to cream it, it might work. Good luck
 
Creamed spinach mal style :)

1 lb or so of well washed spinach
4 cloves garlic, smashed
1 tsp olive oil
2 ounces low fat cream cheese (or the laughing cow cheese wedges)

Put olive oil and garlic in pan - saute until really fragrant
Add spinach and sautee until wilted
Add in cream cheese and stir until it gets all melty and creamy

Add in some parmesan cheese if desired or a shot or two of tabasco if you want some kick...
 
Spinach sauteed with garlic is also just dandy )

Spinach salad w/ some slivered almonds, and a can of mandarin oranges (drained) with a ginger soy dressing is a nice light tasty salad... throw in some grilled shrimp or chicken for a meal.

God do I love spinach!!

Here's what I love to do with it:

Chop up a lot (I'm estimating here), like 8 cups chopped.

Add enough Egg Beaters to mix it into a pretty thick soup consistency.

Add about 1/4 c grated parmesan or romano cheese (reduced fat if you like)

add 2 cloves finely minced garlic

pinch of salt and healthy grating of black pepper.

Mix it all up and it should be like a very thick pancake batter.

If you're really watching fat calories you can use cooking spray, but they do cook better with olive oil: spoon a large tablespoon of the mixture into a hot pan with the oil and flatten out a bit to make a pancake. You can fit several into the pan at once. Cook over medium heat until lightly browned on both sides. Drain on a paper towel.

Serve the patties over pasta with marinara sauce (or just with the sauce if you're not eating pasta.)

They are SO good by themselves, and cold, too!

The real recipe uses 2 pkgs frozen spinach drained, and about 5 real eggs. This is my healthy version. :D

it really depends - spinach deflates so mch when it cooks -i dn't think 1 lbs is unreasonable for 2 people.. cripes I could eat that myself -

i'm digressing -I'd probably use 2 -3 wedges depending on how creamy you wanted it...

you could also chop up an onion and throw it in when you're sauteeing the egarlic for more kick...

Spinach is pretty flavor neutral, you can surprisingly add it to alot of things. Last week in fact I had mixed some cooked spinach (drained and patted dry) into an omelet.

You could also try a pesto sauce and replace some of the basil with spinach and put that over some chicken and whole wheat pasta.
 
My husband cooks it dry in a nonstick pan on the stovetop with garlic and onion until it is a very dark green. I love it!

Also, you can roll it into a whole wheat tortilla with 1 slice of cheese - excellent lunch!

You can also make this:

1 box phillo dough
2 tblsp olive oil
1 large onion
About 6 cups of raw spinach, destemmed and chopped
garlic
feta cheese
wheat germ

Lightly spray lasagna pan with olive oil spray.
Cook the spinach stovetop (dry) with onions and garlic.
Mix in large bowl with feta cheese and wheat germ.
Put piece of phillo on bottom of pan, followed by a few other layers, then a scoop of spinach mixture. Alternate this until you're out of both phillo and spinach. You can brush the phillo with a little olive oil to make it not so brittle. Brush the top also. Bake at 375 for 1 hr. YUM.
 
I've been replacing the lettuce in my salads with baby spinach recently. I was surprised at how good it tastes.
 
That is what I do. But I am not one for tastes. I am like a garbage disposal. I just eat.

but I couldn't just chew on spinach leaves.

He's like Popeye -- he strong to the finish cuz he eats his spinach :D

just opens the bag and down the hatch it goes and the muscles just pop :D

Spinch salad is really good -with some mandarin oranges and almonds or sliced red onions and feta cheese and black olives... it's wonderful.. and has muchmore flavor than standard lettuce

Sometimes when I dont want my veggies to go to waste, I throw them all in a big pot. I would use veggie broth, and you can put some potatoes, corn, whatever is handy. Chicken or turkey is good. Just make a soupy stew :) Add some yummy spices. Mmm sounds good for a cold day like today.
