Singapore Spinach Omelete

I found this recipe recently and I love it! (I usually use more egg whites tho and just add a bit more of the other things)

1 egg
2 egg whites
1/4 teaspoon naturally brewed low-sodium soy sauce
1/4 teaspoon naturally brewed rice vinegar
1/4 teaspoon Asian garlic-chili sauce (optional)
1 1/2 ounces fresh spinach, or fresh baby spinach chopped
1 tablespoon minced fresh scallion

Mix everything but the scallion together and cook (easy lol) sprinkle scallions on top and enjoy!
 
That sounds pretty good Brandi, I may have to try that for lunch today. I'm not a big fan of eggs, but i know i should eat more of them, so I've been looking for more recipes.
