Scared of the scale

My friend will be very happy you said that since it was her jacket that I borrowed. I believe she either got it from the Gap or Oldnavy. One of those stores.

You are drop-dead gorgeous! I agree, you don't look your weight. I guess the height must account for a lot of it. Anyway, you're one pretty lady!

The one thing that I've been very lucky with in terms of my body, is that all of my weight is distributed evenly. Being tall and having a large frame doesn't hurt either. But in being fortunte with not looking my weight, it also set me up for a huge fall because I got complacent and let it creep up knowing that no one would ever be able to tell how much I really weighed.

Busy day

I woke up to a freaking thunder storm today. It was raining very heavily a couple minutes ago, but it's since stopped. Now I've got gray clouds. I normally love rainy days, but today isn't the day because I actually have to be walking around in this weather. Man, where the heck did spring go? I've got a busy day today so I wanted to get in a quick diary entry. I'm probably not going to updating my diary as often as possible for the next week and half. I've got comps (comprehensive exams) that I need to take and pass in order to graduate. I've been freaking out about them for a bit now, and I'm just ready for it to be over with.

I also have work in about 45 minutes and then it's off for "fun filled" day of museum visits in Rochester. Most of the time I'm up for anything that'll get me off campus; especially field trips. But the fact that I'll be stuck with my photography professor for the better part of the afternoon and evening is not looking too pleasing to me. The woman can't stand me, and she's taken a liking into my life as well as my fellow classmates lives miserable. All of us are dreading this field trip.

But I'll have something to keep my mind occupied during the half hour ride. I've got a paper due for my spanish class tonight. It's got to be an analysis of one of the stories that we've read so far. But here's the kicker it's 4 typed pages written entirely in spanish. I like spanish, so I'm actually looking forward to writing this paper. I'm just kicking myself for having put it off until the day it was due. Ah well, I'll learn not to be a procrastinator someday.

Field trips are fun!

Alright so I'm playing hookie. I was supposed to be in class right now, but I'm not motivated to leave my room. I didn't even go to the gym today. The weather is just so blah right now, and we're expected to get snow tomorrow :( . Darn you global warming; you've stolen my spring away. At least I had a good time on my field trip. We visited the Estman museum in Rochester. It was actually Mr. Estman's former residence that has been converted into a photographic museum.

The place is huge and extremely beautiful. Apparently, it was a 50 room mansion that Robert Estman shared with his elderly mother. The best thing on display was their exhibit concerning the crisis in Darfur. It really opened my eyes to just how many problems my continent is facing. I'm just really happy that I'm able to help out in some small way. A friend of mine has set up a relief effort that will be shipping school supplies to local children in various regions in Africa, and she's also set up a charity music concert where the proceeds will go towards building schools in Senegal. The organization that I'm a part of is also helping with this benefit concert by donating money as well as our school supplies to aid the effort.

One small thing can go such a long way. Besides, doing something like this keeps me from becoming too self absorbed because I realize that in this weight loss journey, it becomes real easy to become so consumed with losing weight, counting calories and exercising, that other issues tend to take a back seat. The trip to the museum helped me to open my eyes to more pressing issues, and I'm grateful for that because it gives me something to focus on outside of work, school and weight loss. Ok, let me get off that self exploratory essay and get back into self absorbed mode.

All in all, my total calorie intake for today came out to 1,457.
 
good luck on the spanish paper. it is wonderful how u put into perspective that though weightloss is an essential part of our lives & not necessarily the centre of our being! well done!
 
I really respect that you do charity work. I always want to volunteer more, but then I never quite get to it. What sort of organization are you a part of?

Don't be ashamed of your height! You can be a model now, while all us under 5'8 girls can only watch you from the audience ;)

Well the group that my friend has started on our campus is called project Deep. You can find out more about them on the internet. She's really into humanitarian causes, and her enthusiasm rubs off on other people because we know that she's doing this because she wants to and not because she obligated to. The group that I'm in is called P.O.W.E.R, it's the minority student's association on campus. We're all trying to give back, it's the least we can do.

I think I'll leave the modelling up to the professionals. Besides I'm not very photogenic and after watching the Agency on VH1, I'll leave modelling alone. Only in the modelling industry would a woman that's 6 ft tall and only 140lbs be seen as fat. No thank you.

Haha. Yeah... the modeling world is a dangerous place for your self-esteem, that's for sure.
It's cool that you're involved in that organization. It feels good to "give something back". You really strike me as the humanitarian type for some reason! You come across as being very considerate and caring.
 
ah man, I really had this nice long post all written out, and then I got signed off and lost the whole thing. I guess I'll just have to try and repost it when I get back from the gym.

Humanitarian, awww I'm the next mother Teresa. Nah, I just think that instead of always saying "hey we should do something about this..." you actually have to go out and do it.
 
Feeling skinny

You ever wake up one morning and feel as though you weigh 10lbs less than you did the day before??? Well I think I'm having one of those days. I'm feeling extra light :D . But I won't be able to tell if this skinny feeling is actually a result of having lost weight, or is just me feeling hungry LOL. I gotta go and buy a new scale since I returned the one that I borrowed a while ago.

Yesterday was a good day food wise. I stayed within my calorie limit and ate some really good stuff. The only thing I was disappointed in was my water consumption. At some point I lost track of just how much water I had drank, I remember, or at least I think I remember drinking 4 cups of water yesterday. Haha, you know you're life has become too busy when you can't even account for what you did the day before.

Ah well, today is the start of a new day. My big brother is here visiting; my cousin will be here to see me also in a couple of hours, and we've got a weekend of fun planned. Can someone say India?? Oh yeah, I'm getting some Indian food today, and I plan on eating like a Queen for the rest of the week; courtesy of my big brother, although he doesn't know it yet.

What to eat when ordering...

In celebration of me going out to have Indian, I'm posting up this nice little thing about what you should order when on a diet and craving some spicy Indian food.

Navigating through a restaurant menu is often tough, but it's even harder when you're navigating through yummy food that you're not totally familiar with. WebMD has created an easy choose/avoid list for the next time you eat Indian.

INDIAN:

Curry is the name of the game here, but there are also a lot of fried food land mines, so be careful.

Choose

Basmati rice
Legumes (chickpeas and lentils)
Vegetable dishes
Yogurt-based sauces
Lean meats, poultry, and seafood
Mulligatawny or lentil soup
"Papad" -- baked lentil wafer
Tikki, tandoori, or kebab preparations

Avoid

"Ghee" -- clarified butter
"Molee" -- coconut milk or cream
Any kind of fried foods
High-fat beef and lamb dishes
Creamy curry sauce
"Korma" -- cream sauce
(Limit portions of coconut and nuts)

So, the next time you're craving Indian, just remember this choos/avoid list, and you'll be able to enjoy your night out guilt free.
 
New recipe alert

It's been great having my brother and cousin over for a visit. We've been working out together, and their being here has actually inspired me to cook. Hahha, the closest I've come to cooking since being back on campus has been making eggs for breakfast. Well, that's it with the rambling. Here's the new recipe. Excuse my obsession with Thai food, but this is really good stuff. You all should try it.

Tom Yum Goong

INGREDIENTS:

* 3 cups chicken stock
* 1 stalk lemongrass, sliced thinly (tough outer leaves and bulb removed)
* 3 kaffir lime leaves (find these in the freezer section of your local Asian grocery store)
* 3 cloves garlic, minced
* 1-2 small green or red chillies (depending on desired spiciness), de-seeded and sliced
* 1/3 cup fresh coriander (or cilantro), roughly chopped
* 2 Tbsp. fish sauce
* a handful of fresh shiitake mushrooms, sliced thinly
* 12 medium or large raw shrimp, shells removed
* 1 can coconut milk
* optional: additional Thai red chillies (left whole), plus other vegetables (like green and red bell peppers), as desired

PREPARATION:
1. Pour stock into a deep cooking pot.

2. Place lemongrass slices in a food processor and process until finely grated, or pound by hand with a pestle & mortar and add to the broth.

3. Add garlic, chillies (including whole chillies, if using) and lime leaves. Bring to a boil.

4. Add the mushrooms and shrimp. Boil for 8-10 minutes.

5. Turn down the heat to low and add the coconut milk and fish sauce. Stir well to combine. Test the soup for spice and salt, adding more chillies and/or fish sauce (instead of salt) as desired. If too spicy for your taste, add more coconut milk.

6. Serve in bowls with fresh corriander sprinkled over and quarters of fresh lime on the side. ENJOY!

Variations:

* For a vegetarian version, replace shrimp with cubes of firm or deep-fried tofu, and substitute vegetarian fish soy or soy sauce for regular fish sauce. Use vegetable stock instead of chicken.
~ If you prefer chicken over seafood, substitute shrimp with chicken breast (cut into bite-size pieces).
~ This soup can also be made without coconut milk (replace with more stock). Tom Yum is served this way in many parts of Thailand.
~ For an even healthier soup, add more vegetables like red and green bell peppers, celery, cherry tomatoes, etc. (at step # 4).
~ If desired, add rice or egg noodles for a nutritionally complete and satisfying meal.

Hope you guys enjoy the soup. It's really good for you and I'm told that while it's a natural cure for colds and the flu, it also helps boosts your immune system.

They've left me

So my brother and cousin just beat a hasty retreat back to nyc. I'm sad, but we had a heck of a good time yesterday just hanging out and being silly. We went off to a Thai restaurant had a nice meal, took pictures and walked around Ithaca for a bit before heading on back to campus. There, the real fun began. We hit up the Pink Party (everyone had on some kind of pink) and danced until 1:00 in the morning.

My brother fell in love with one of the girls on campus and spent the entire night dancing with her. It was funny because they both have very similar personalities, and they were being so shy around each other. All my friends noticed and were like "awww isn't that cute." I was laughing even more because they're saying this about a 24 soon to be 25 year old man. My friends and I just generally went crazy and had a great time. I worked up quite the sweat dancing last night, but it was great. Good way to end the weekend and get back into work mode. Only 4 more weeks til school is done with forever!!!!

i know i'm late with this, but i LOVE when i wake up feeling that way! it isn't everday, of course, but there are those days when i just wake up really pleased with myself.

They call me O. I just thought I'd put that out there since I think it's funny that people call me funky. I love it actually, but I should have been more formal with the introductions. My name's O...yes I know its a vowel, but it's also my name. My parents were inspired. It's a shortened version of my actual name, but I've been called O for so long, that it's become the official go to name for people. At least I never have to worry about anyone having the same name as me. Alright, I'm off to partake in pot luck. I didn't bring anything but my appetite :D .
 
Nice to "meet" you, O. Heehee. I love it! It's cool because my name is Dee, so we're both letters. Like yours, mine is also a short version of my full name.
Nice to hear you had such a fun time at the Pink Party. Dancing is probably my favorite form of exercise. You can work up a real sweat, that's for sure.
