I found a great Fig infused balsamic vinegar that I love to put on a salad with Flax Oil. Even better if you add a sliced up boiled egg & some minced garlic.

One of my faves is with Spinach & Strawberries & Snow Peas.... mmmm.

strawberries w/ balsamic vinegar is awesome - adding spinach to the mix would be heavenly -

Basic italian (?) dressing:

1/4 cup olive oil
1/4 cup vinegar (any kind is OK)
1/4 cup fresh chopped basil (or 1/2 teaspoon dried)
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon sugar (optional - sometimes I forget and can't really feel the difference)

Mix all. The original recipe included about 3 tablespoons of cream, so you may experiment with yoghurt or fat-free cream or something. I never do it that way so I don't know.

cream with vinegar? won't it curdle te cream?

adding vinegar to milk is the cook's substitute for buttermilk...
