I come from a restaurant family, Italian restaurant no less, so I had the challange of turning my best selling, time honored family favorite Italian recipes into a diet food that even Mama would be proud of (although the bottled Caeser dressing would, no doubt, lead to a spoon'n to the noggin. shhh). Enjoy!
This is one of my all time favorites!
Cooking time ~20mins. serves 3-4 people
1only Box Whole Wheat Pasta, I like Rotini (13oz-14oz)
1only Whole Red Pepper
4cup Baby Spinach
1cup FF Caeser dresing
TT Shredded Parmesan cheese
TT Cracked Pepper
TT Salt
1 Cook pasta according to package directions.
2 Cut Red Pepper into quarters, then place the quarters over the open flame of your range top (assuming you have an open flame stove, if not just saute
) Let them cook, yes they will char a little bit, this gives GREAT flavor. This process takes several minutes, rotate as needed. When finished slice the pepper into slices.
3 Heat Saute pan with a light film of oil, I use Pam olive oil
and throw in spinach, the spinach will cook down very fast, and will be far less than you might think when starting. Toss in the roasted red peppers.
4 In the large saute pan, toss the cooked pasta with the spinach and the pepppers. Add the Caeser dressing, stirring frequently until heated through (approximately 3-5 minutes).
5 Top pasta with desired amount of Parmesan cheese, cracked pepper and salt.
Alternatives:
Chicken and/or artichokes go GREAT in this dish, and helps give that 'meal' feeling to the dish.
