Quick, simple healthy stir fry

I'm currently stuck living in a barracks room so I was stuck eatting at the dining facility... yuck so i got the idea to buy a forman grill and a hot plate.

now one of my favorite healthy dinners to make is a healthy stir fry. here's what i do:

chicken breast cut into tiny pieces
1 bag frozen veggies (i use the mixes of carrots, peas, corn, string beans)
olive oil
seasonings (up to you - i have used lemon pepper and this garlic herb grilling powder)
brown rice (i use the boil in a bag)

on stove top (or hot plate) in a pan pour enough olive oil to THINLY coat the bottom, add in seasonings to have the 2 mix together.

add in frozen vegetables and pieces of chicken.

make brown rice.

when i was cooking this at home i'd put the rice (once boiled) in the pan also for a few minutes to take on the flavors but now i just serve the veggies over the rice!

it's really simple but very good!

**ALSO - this is very good with pork**
