Super quick and tasty pasta sauce, that can be made with ingredients from the cupboard
1 can crushed tomatoes (in the summer, use fresh - takes about 4- 6 really ripe tomatoes)
1 tsp extra virgin olive oil
1 can anchovy fillets in oil, chopped up (if you want to drain the oil, then use additional oil above)
2 tbs capers, rinsed and chopped
1/2 cup black olives, chopped
4 cloves garlic, chopped
1/2 tsp red pepper flakes, if you like
1/2 cup chopped fresh flat leaf parsley
In a skillet, add the anchovies with the oil, the capers, the chopped tomatoes, the olives and the pepper.
Simmer about 15 minutes
.
Remove from the heat and add the parsley, finely chopped.
Serve over pasta.
I've added some protein to this dish by adding some chunks of fresh tuna or swordfish a nd simmering until the fish is cooked.. you could also add chicken or turkey breast as well...
The dish has an intresting history - that might be urban legend might be turth... Some says it has aphrodisiac properties. but supposedly this is the dish that the hookers in areas of italy would cook and the intoxicating smell of the garlic and other ingredients would entice 'customers' to their door
