pureed navy beans or cauliflower

has anyone tried this in place of mashed potatoes???? i'm just curious. i'm very excited to try the navy beans...whoo hoooo!!!!
 
I've seen cauliflower used a lot as a low carb replacement for mashed potatoes - i suppose if you like cauliflower it'd be really good - but i really don't like cauliflower... :D\

Rachel Ray's cooking show has done a few different recipes for me.

mashed beans however, I like the white canneloni beans, are great - but i like them as a dip - like hummus...
 
well i'm thinkin' if add the normal things i add to potatoes it won't be too bad...i don't know...i think i'll try it out tomorrow and see how it goes.
 
Rachael Ray's recipe

Smashed Cauliflower with Cheese
1 large head cauliflower, cut into florets
3 cups chicken stock
4 tablespoons butter, cut into pieces
1 cup shredded white extra-sharp Vermont Cheddar (recommended: Cabot brand)

Place cauliflower in a medium shallow pot or pan. Add stock, cover and place pot over high heat. When liquid boils, reduce heat to simmer and cook covered 10 minutes. Remove cover, raise heat to medium high and allow the broth to reduce by half, 2 minutes. Add 2 tablespoons butter, cut into pieces and the cheeses and smash the cauliflower with a masher to the same consistency as desired for mashed potatoes. Season the cauliflower with black pepper, a pinch of salt and nutmeg.


The problem I always had with making it - is that the cauliflower never quite smashed -- i think a food mill would be helpful

thanks for the recipe. i also found another on the food network where she made wheat penne with cauliflower sauce and it looks great too. thanks so much! :)
