pickles cucumbers olives and celery

I eat one meal a day, rice 800 calories. (one box of Zatarain's Spanish Rice 720 calories and one can of Rotel mild spicy tomatoes 75 calories) and while I get the munchies all the time, I satisfy them with pickles, cucumbers, olives, and celery. I snack on those anytime I feel hungary.

Doing this for four months now, But I scan't lose the extra 20 lbs. I weight 200 and am 5'10" male.

Could too much pickles, cucumbers, olives and celery be stopping me from losing weight?
 
Pickled cucumbers are a great snack, low calories. I use them all the time. Look at how many calories u need to lose/ maintain/ gain weight then look at your intake each day and maybe adjust by swapping something for something lower cal.
