Oven-baked eggplant

So I just made this and it was really good, so I thought I'd share the recipe.

Ingredients:

- 1 eggplant. Thinner is better.
- Goat cheese. I use Chavrie because it's fairly low in calories - 2 tablespoons is 50 - and it's the least crappy of the common brands. If you want you can substitute fancier stuff.
- Fresh herbs. You can use dried, but they're nowhere near as good. I like cilantro for this.
- Garlic powder.

Preheat your oven. Cut the eggplant into slices. Try not to make them TOO thick. Once you've gotten the slices, spread them out on an oven tray and spray them (not too much, just enough to keep them from sticking.) Spread the goat cheese on top, sprinkle them with garlic powder, and press some of the herbs onto each slice. Bake them in the oven until they're done - you'll know because the eggplant won't be as bitter.

Calories: Depends on the eggplant. The number I found online is 132 per eggplant, but obviously yours might be bigger or smaller. Then 50 for the goat cheese, and a few more for the spray, and 200 should be a safe estimate.
 
that's my favorite way of preparing eggplant... you don't even need to peel the eggplant first.


Just baked like that - is also great for pseodo eggplant parmesan - layer it with some ricotta cheese nd tomato sauce and bake it for a bit..

and the japanese eggplant -the long skinny ones - are great because they don't have any of the bitterness that the regular eggplant does...

If you slice, salt, let sit, and rince regular eggplant it doesn't have the bitter taste. Yummm, can't wait until I can pick it out of the garden. :drool5:

Yes my mom does this, Or you can also soak the eggplant in salt water for about 30 mins. This prevents the eggplant from drying out too quick when you bake it as well as drawing out the bitterness.

Another really yummy eggplant thing to do is, eggplant chips, if you slice and then julienne them, then coat them in breadcrumbs ( my mom does this). Although, are breadcrumbs bad for you? I think she also coats it in eggyolks or white to make the crumbs stick.....

Also you can also slice up your eggplants and have a stir fry with them, with some lean beef mince, garlic, bamboo shoots and also some black vinegar( the kind you get in asian stores). You do need to put a bit of oil in to get the pan going, as the eggplant can soak this up quick sticks. But its a nice way of having dinner, its so yummy on rice!
