I'd like to share with you a light cookie recipe.It is low in fat,and is made with whole grain flour and wheat germ.This recipe is for about 20 cookies. Ingredients:
- 125g of whole grain flour
- 75g of wheat germ
- 125g of light muscovado sugar
- 1 egg
- 100g of light butter(personally I use olive oil butter)
- A pinch of salt
- A teaspoon of baking powder
- As to avoid chocolate,you can put dried fruits or hazelnut
- Preheat the oven at 180c
- In a large bowl beat the egg with an electric mixer at high speed adding progressively the light muscovado sugar and the melted butter.
- Then you can add the whole grain flour,the wheat germ,the baking powder and the pinch of salt.
- As you prefer,you can add either dried fruits or hazelnut to the cookie paste.
- Line 2 large baking sheet with parchment or wax paper.
- Take one tablespoon of the paste for each cookie and arrange mounds with them.Flatten mounds into three inch round,using the palm of your hands(you can put some flour on your hands,if it is too paste up).
- Bake them for 7 to 10 minutes,until golden.
