Not a New Years Resolution One & Done, This is FUN!

I'm a 23 year old male who has let my weight slip severely. I've always had a poor diet, though in high school and most of my college years, I was active enough to combat it to some extent. Though as my diet got progressively worse through college, and as my activity level started to decrease, things started getting worse; graduating college and starting an office job and loosing practically all activity and perhaps an even worse diet was the final straw; over the last year my weight has shot up to somewhere around 255lbs, FAR too much for my 5'11 frame. I was never counting, but I'm estimating I was consuming at least 3000, and more than likely sometimes 4000 calories a day, and they were always unhealthy calories too. Recently I decided it was now or never, and started watching what I eat, I've found it MUCH more achievable than I had originally envisioned; I've actually found myself having to deliberately add a few calories to my daily diet, I've been able to rather easily (I use that term lightly) limit myself to 1200 calories a day, though I try to make sure I get closer to 1400. I've too started to exercise, right now I'm mainly just doing moderate Cardio (15min a day on Nordic Track), though as I get into better shape I plan on expanding on that. Given I've more than cut my calories in half, and have gone from no exercise to at least some, I'm expecting pretty good results. My target is the 200-205 range, though with that, as I move forward with this lifestyle change, I plan on adding a good deal of muscle to my frame, and given I have a bigger frame to start, I may settle for 210. I joined the forum hoping to hear some good tips/recipes, and here shortly be able to share what has been working for me!
 
It is fun man, I remember starting at 240 and just watching the weight slip off all the way to 220 was super exciting, then I hit my first plateau, then another at 200, and a third at 170. Expect them, all the fun slips away and you might be stuck at the same weight working your ass off for 2 or 3 weeks but stick with it man! Good luck! :)
