New here.. But have been reading for a while

I have been reading the forums here for a while now and the help this forum provides is truly unbelievable. I changed my lifestyle about hmm 3-4 months ago and I was at around 275 I am now down to 220 so I think I am doing well but I have a few questions:

1) I drink quite a bit of coffee everyday I changed from using creamer to using powder or soy milk and was wondering if also counts as my water intake.

2) I have compared the labels over and over again but just wanted some reassurance that Soy Milk is indeed better than 2% milk. I know I should just use skim but soy tastes good at least, whats you guys opinion on this.

3) I go to the gym 5-6 times a week and currently do about 1hr of cardio 3 times a week and weights the other days combined with 30min cardio. I had been doing 5x5 workout (consists of squats, dead lifts, rows, chin ups, military press, bench press) but I am beginning to think that is more to gain muscle than to keep it. What kind of weight lifting should I be doing?

4) I have tried again and again to go jog and do more outdoors exercise but no matter how much cardio I do at gym I just seem to be unable to keep a steady and descent speed while jogging and just get short of breath quick. Should I just loose more weight than worry about jogging so that it doesnt hurt my joints?

5) I currently take in ~1600 cal/day as I loose more weight when do I know when to start dropping the cals to match my new weight?

Sorry to bother with so many questions I am sure I have many more and the support here is just great. Thanks for any response and if I missed anything about what I do just let me know and I will correct it.
