Ingredients:
1 medium sweet onion, chopped
1 package of canadian bacon, diced (you could also substitute 1/2 cup very crisp bacon)
1 cup water
2 medium white potatoes, peeled and cut into 1/2-inch cubes (red potatoes give it a nice twist on it)
2 cans (6oz. each) chopped or minced clams (use clam juice)
1 container fish stock (chicken stock would work here as well)
4 cups skim milk
3 tablespoons each: flour and cornstarch mixed into 1/2 cup water
Freshly ground pepper to taste
Directions:
In a large, heavy soup pot sautee onion til soft, but not carmelized
Add diced canadian bacon and sautee about 5 minutes.
Add stock, potatoes, clams and clam juice from cans.
Simmer until potatoes are tender, about 15 minutes.
Add milk, flour-cornstarch mixture and pepper.
Cook over medium heat, stirring constantly, until thickened.
Garnish with some fresh parsley for color.
makes about 6 servings -and roughly 250 calories per serving... second day it's even better...
