New dieter in need of opinions/answers

So the 2nd week of my diet is over and im entering the 3rd, at first my diet was a little different than it is now, although i was still consuming a small ammount of calories, but i think im going to stick to this one i have now.

I am 19 years old, 5"7, 258 pounds. My gym routine is 2 days for over an hour then then don't go 1 day. I do (6 miles) 30 minutes of the bike with decent amount of resistance by going slow for 30 seconds, then fast for 30. Then I go walking for another 2 miles (takes around 38mins) on the treadmill. Also during this whole workout my heart rate averages around 165. My diet is around 1,600 calories a day, cereal in the morning, normal sized meal for lunch, a couple hours later a natural multivitamin shake (100 cals not counting milk), then 1 hour later i go to the gym, then around 2 hours after the gym i eat another normal sized meal and thats it. I average around 70 ounces of cool water a day and only drink around 2 cups of something like sunny delight a week. There is only around 1-2 fruits and 1-2 vegetables servings throughout the day.

So far I only lost around 3 pounds since those 2 weeks, but I did screw up a couple times by eating a ham wheat sandwich from subway and a fatty big burrito my mom brought me one day (hate myself for that)

Im not sure of the reason why ive only lost around 3 pounds, but I should say before this my activity level as very very very low, almost nothing and diet was bad. I have noticed my leg and thigh muscles bigger (i am aware muscle weighs more than fat but im not sure how much this is to blame for only 3 pounds of weight loss.) I was fairly discouraged when i looked at the scale. So im looking for opinions on my diet and exercise
My goal was to lose around 10 pounds a month, since i am obese. What can i expect in the future? Opinions,comments and answers that help me in any way i will greatly appreciate. Thanks
 
Before you go to much further I'd spend some quality time reading the stickied threads in the forum - especially those in nutrition, exercise and on topic...

How does eating a ham wheat sandwich count as a screw up?

3lbs in 2 weeks isn't bad - 1 percent of your body weight a week is to be expected...

I'd concern yourself less with what you're seeing on the scale (*read the thread entitled Scale mentality) and focus on measurements instead...
