The cream of broccoli soup from my repertoire
Saute one chopped onion (sweet is my choice) and a couple of cloves of garlic in a pan
when softened
Make a roux (1 tbs olive oil 1 tbs flour)
cook together til tan in color
Add 2 cups low sodium chicken stock
Add 2 cups skim or 1 percent milk
Add 1 bag of frozen chopped broccoli (or fresh but this is one of my pantry meals
Cook til broccoli is tender and broth is slightly thickened
BLend with hand blender or in a real blender in batches if desired
Sprinkle some really good cheddar on top -
