Mixed Vegetables

Such as green peas, copped carrots, corn and such.

Any of you guys know a good way to prepare these, other than just boiling/steaming it? It's sorta bland when I do this, I would like very much to not add salt, but sometimes its difficult. I use a teaspoon a butter with them to add a little flavor. Is this a good idea?

I usually serve these over brown rice.
 
roasting is my preferred method of cooking vegetables -it just gives them an added kick -- toss them iwth a little olive oil and some chopped garlic if you like (il ike - i'd put garlic on oatmeal given the chance) and roast in the oven ona cookie sheet (i use my toaster oven) for about 15 minutes at 350 degrees...

I was reading in cooking light today, that butter is actually better than margarine (i've always preferred the taste) just use less of it... but olive oil is probably healthier

I'll give roasting a try. I'll probably also try grilling them right with my meats. Its such a good feeling to add so many varieties of veggies to my diet. Knowing that I'm definately eating a lot healthier, makes me feel a ton better too.
 
well i stirfry mine on a little olive oil, garlic, season it with variuos things and soya sauce, after that until they're cooked i put either water or vegetable stock (but very small amounts, just not to let vegetables burn) and that's it.
 
I'd like to try and stir fry them in a little olive oil too, would it be ok? I know that olive oil's good for ya, I just don't wanna add more cals/fat to my diet.
 
if you stir fry in a non stick pan - and just add a tsp of olive oil at the end (or sesame oil - use about 1/4 - 1/2 tsp) you'll get all the flavor -- and low calorie addage..
 
well not all fats are bad for you. depends on your diet. i eat all types of food, but i eliminated those which i know are bad for me... like white bread and pasta, i try to use more whole wheat stuff.

as for fat, as far as i know one spoon of olive oil or any other vegetable oil is not harmful. in fact, its bad to completely avoid fats... that is just a signal to your body to preserve fat and consume proteins from your muscles. you lose weight, but muscle weight.

i beleive everything can be used, but in moderation. and i always stirfry mine on just 1 tb spoon of olive oil (a bit less, depends on how much vegetables i put and how i cut my vegetables - if i cut them in stalks, then i use 1 tea spoon, but if i cut my veggies finely then i use a bit more-myx. 1 table spoon, so my onions wouldn't burn).

then if i have salad, i don't use oil, but make low fat dressing made of low fat cottage cheese and some seasoning in it).

I got some oilive oil and will give it a try today :).
