Mexican Food!

My husband is Mexican and LOVES Mexican food. I have NO clue how to make Mexican food and he said him or his mother will teach me BUT I wanna make HEALTHY Mexican food - any suggestions?
 
a lot of authentic mexican food uses lard as the base fat -which is really nto the best choice for fats - substituting olive oil would probably be better.

Rick Bayless - a "celebrity" chef (he own frontera grill, a fabulous restaurant in chicgo, does a lot of really good mexican cooking, and has had aPBS cooking show on for a few years..

His , might give you some ideas for recipes - or checkout some of his cookbooks at youor local library..
 
ultimate guac:

2 ripe avacados
finely chopped handful of cilantro
1 can VERY DRAINED diced tomatoes
3 minced jalapenos, de-seeded
1 teaspoon salt
5 normal sized garlic cloves, minced
1/4 small onion, minced
freshly squeezed juice from 1 lime

Put everything in a bowl and smash up and mix up with a fork. Great with other stuff other than chips, like turkey burgers.
 
i come from a big spanish family who loves cooking food, alot of spanish food tends to be fried. i dont think i've ever really seen healthy spanish food this best thing i guess if your gonna cook it for your husband is to minimize the portions.

Most Spanish recipes I've ever seen have a helluvalot of garlic, tomatoes, olive oil, and miscellaneous veggies. I'm sure you can make most anything unhealthy if you really tried. Loading up a Spanish paella dish with lots of sausage instead of artichokes and beans and use high sodium store bought chicken broth would be a good way to do that.

- you could always go to Chipolte instead and get 3 soft tacos with chicken steak or pork for under 650 calories :)

I love Mexican , which is way different from traditonal spanish . You could always make low fat fajitas using low calorie or whole wheat tortillas and forget the sour cream.
 
I make some fajitas (I know they are more Tex mex but they are good) that are really healthy, low in fat and really good.

You heat up a tablespoon or two of olive oil (120 calories per tablespoon) in a frying pan, add some sliced up bonless, skinless chicken breast and cook for a few minutes. Then add some sliced onions and bell peppers and minced garlic (a clove or two) and cook them up with the chicked until the chicken is done and no longer pink. Then you had just 1/2 a packet of your favorite taco seasoning mix or your own mix of spices that you use in tacos and maybe just a couple of tablespoons of water to get it all going. Let it heat through and serve on tortillas with some salsa and if you want, a little cheese. Go easy on the cheese though because that's pretty high in calories. Also, no more than two per person. The tortillas are about 120 calories each and the olive oil adds some fat but other than that, (and cheese if you use it) they're pretty healthy and over all, low in calories.
 
Now I'm having Chipolte for lunch today , get me talking about Mexican and I must eat it !!!
 
chipotle has a great nutrition calculator so you can play around a little and get out of there for a reasonable amount of calories :D
 
Yeah people at work laugh at me , I take all the lunch menus and write the calories right next to the item so I can easily figure out my best options, fyi the chicken soft tacos today were superb thanks for the Mexican idea folks :)
