I make some fajitas (I know they are more Tex mex but they are good) that are really healthy, low in fat and really good.
You heat up a tablespoon or two of olive oil (120 calories per tablespoon) in a frying pan, add some sliced up bonless, skinless chicken breast and cook for a few minutes. Then add some sliced onions and bell peppers and minced garlic (a clove or two) and cook them up with the chicked until the chicken is done and no longer pink. Then you had just 1/2 a packet of your favorite taco seasoning mix or your own mix of spices that you use in tacos and maybe just a couple of tablespoons of water to get it all going. Let it heat through and serve on tortillas with some salsa and if you want, a little cheese. Go easy on the cheese though because that's pretty high in calories. Also, no more than two per person. The tortillas are about 120 calories each and the olive oil adds some fat but other than that, (and cheese if you use it) they're pretty healthy and over all, low in calories.
