marinades for chicken/steaks?

What should I look for in ingredients in marinades that could be harmful? What about A1 or Heinz 57 marinades? I want to start grilling/cooking my meals for lunch at work and want them to be healthy. I don't want to add anything except for a simple marinade. I prefer if it's something I can get at the store instead of making. Recommend some healthy condiments as well if possible (A1 sauce, ketchup, etc..).

Grilling meat, poultry, or fish, whether over wood, charcoal, or gas, exposes the food -- and whoever eats it -- to two separate carcinogens, (PAHs) and (HCAs). Many scientist (who have studdied grilling) now believe (with studys to prove) that grilling any type of meat (especially with lots of fat on it) is a process that should be -very- limited
 
marinades are really expensive when you think about what they are, its just salt, water and flavor. why would you pay so much for a jar when it costs very little to do it yourself.

red wine and basil is a great marinade for chicken or beef, you only need one glass of a cheap wine.

pesto

oil, tobasco, tomatoes

Worcestershire and soy sauce.
 
So you would suggest to bake in an oven? what about round steak? oven as well? Do you think grilling vs. an oven will make a big difference in flavor?
 
Grilling is fine in limited amounts (you do not want to grill every meal you eat) - their are so many ways to cook chicken. Learn them all.

Their will always be a difference when not grilling compared to grilling. Grilling meat is just so damn good.

Mix it up cook chicken one way for a while then switch it up and cook it another. do not ban grilling just do not do it every day.

For the record my favorite "marinade" would be pineapple if you could call it that ;).
