Made stew, sound OK?

OK, I made some beef stew, kept it simple and full of veggies. One pound of lean beef cooked with a half cup of onions, drained and extra fat. Added a cup of potatoes, a cup of carrots, a cup of celery, 2 cups of cooked tomatoes, some basil, and a little salt. Let it simmer for an hour, turned out to be delicious! How does it sound? Some good carbs from the veggies and protein from the beef...
 
It's excellent in terms of healthfulness. If you want better flavor, caramelize the vegetables (all but the tomatoes, of course) in a little olive or canola oil. To get them golden brown you have to work in smaller batches so that the veggies aren't crowded in the pan, or else they'll just steam. Caramelization will greatly improve the flavor/color of the stew plus the texture of the individual vegetables. The same applies to the beef, of course, but I'm presuming you did this.
 
i know it's really bringing up an old post but something to consider is replacing the potatoes w/ cauliflower. its not as "empty" as potatoes and better for ya ;)
