Low Fat Chili

Found this while surfing the web, I might add some carrots to sweeten it rather than brown sugar, and kick it up a bit, but I think I'll try it next weekend.

From The Honorable Jim Edgar Former Governor of Illinois

Ingredients
1/2 pound ground lean beef
1 cup chopped onions
1/2 cup chopped green peppers (optional)
One 8-ounce can low-salt tomato sauce
14.5 ounces very low sodium beef broth (canned or dry substitute)
One 6-ounce can low-salt tomato paste
2 teaspoons chili powder
1/2 teaspoon cumin
Brown sugar to taste (optional)
Two 15.5-ounce cans dark red kidney beans (undrained)

Cook beef, onion and green peppers over medium heat until beef is well done and onion and peppers are soft. Strain all and run under hot water until beef loses oily feel when touched. Add remaining ingredients and bring to a boil. Reduce heat and simmer. Adjust seasonings to taste.

105 calories 3g fat 0mg cholesterol 51mg sodium

I love chili. I've started using ground chicken instead of beef, and it tastes exactly the same. I don't use brown sugar either. :)
 
Ground chicken...hmmm...great idea! I've been thinking of making a batch of chili - I think I'll give it a try!
 
Chili without heat? Ground white meat turkey is also a good substitute for ground beef - though ground beef if you get the 97 percent lean isn't evil - I still love me some burgers :)

that chili doesnt' sound bad - just a little bland - needs to be kicked up a bunch of notches with some heat..
 
Well, I do put a little more chili powder in mine, as well as cayenne pepper, red peppers, a splash of salsa, and the diced tomatoes that are 'chili style'. That's plenty enough heat for me. ;) :D
