low calorie chicken recipes?

Hi everyone!

I am looking for some interesting low calorie chicken recipes. It has to be relatively fool-proof because I haven't quite mastered cooking yet. I'm a vegetarian, but I occasionally cook meat for my husband. The problem is that I don't taste it, and I think he's still worried about hurting my feelings if it's terrible. (We've only been married for 4 months so I'm sure that'll change!:) ) He's not a picky eater so I'm willing to give anything a try. Thanks!
 
Chicken Caesar Salad.
I make my ceasar salad with those 'et tu' boxes - all you need is the lettuce. If you want it low-cal try a low fat caesar salad dressing instead. And skip the crutons. I grill my chicken on the barbecue until it's white throughout - for seasoning just some salt and pepper on both sides. Then you can cut it into strips and place it on the salad. If you buy those salad kits it's pretty much foolproof because all you have to do is grill the chicken and mix up the stuff with lettuce. Simple and it can be made in no time. You can also make up your own salad... something with spinach leaves and whatever you've got for veggies. Be creative! Adding the chicken jsut makes it a meal! :) I know this is kinda vague for a recipe so if you've got any qusetions just ask.
 
Chicken chimichanga ( I don't think I spelled it right but you know what I'm trying to say)

Chopped boneless chicken stir fried in a bit of water, taco seasoning and olive oil
add 2 tbsp light or non fat sour cream
and 2 tbsp low fat ranch salad dressing

wrap and tuck the mix in a wheat tortilla and place in a hot skillet with 1 tbsp olive oil just to crispen

top with diced tomatoes, olives, salsa, lettuce, onions and 2% cheese

Side-
mash pinto beans in a skillet with a tsp of olive oil (optional) and a tbsp of taco seasoning for refried beans

This is easy and inexpensive. The only difficult part is getting the hang of wrapping the tortilla shell.

If your a vegetarian, you can put the beans in yours instead of the chicken. That tastes good too.
 
I buy boneless skinless chicken breasts or tenderloins. Marinade them in Stubb's chicken marinade. Sprinkle them with Ms Dash salt free chicken 'grilling blends', and cook them on the george foreman grill. Ultra easy.

And, only 100 calories per 4 ozs.

Here's one I tried last night. It was ultra easy and tasted pretty good.

Marinade chicken breast fillet in
1 tbsp soy sauce,
1 tsp worchestershire sauce,
1 tsp sugar and
1/4 cup milk

marinade for two hours. Roll the chicken breasts through corn flake crumbs and bake in a 200 deg celcius oven for about 15 mins until cooked. It should be served and eaten right away so the corn flakes remain crisp. Good luck!
 
HI,

2-3 green bell peppers
1 large white onion
2 chicken breasts
1 large jalopeno (if you like a little spice)

Slice up all veggies, keep the bell peppers and onions in pretty big pieces. Put chicken breasts in a 9X9 glass baking pan. Season how you like, i put: salt, fresh ground pepper, garlic powder, lemon pepper, and cayenne. Put some worchestchire over chicken. After you have done that take your veggies and cover the chicken with them on sides to if possible, and bake on 350 until chicken is done. About 30 - 40 minutes.

This is a super easy recipe. The hardest part is chopping up veggies. Its very versatile too. I have put cloves of garlic in with the chicken, and that turned out really good !!

One other thing, after the chicken is done cooking, you can put a slice of pepperjack cheese on it before you take it out of the over YUMMY !!
 
Boneless chicken breasts sliced into strips
juice of 2 lemons
2 -3 cloves of garlic smashed
3 tablespoons of fresh cilantro
1 jalepeno pepper minced

Throw all ingredients in a ziplock bag and let marinate for a while (overnight is fine, just an hour is fine)

Grill, broil, saute in dry skillet, cook however you want...
serve with spinach cooked with garlic and a splash o soy sauce and lemon..
 
My version of Tandoori Chicken

1 chicken breast

Marinade

4 tbs low fat or non fat plain yogurt
1 tsp curry powder
1 tsp cumin
2 cloves garlic, minced
1 tsp fresh ginger, minced
Juice of 1/2 lemon
zest of 1/2 lemon

Combine marinade ingredients in ziplock bag and mush together so it's well mixed
add chicken breast to marinade and zip up bag(or chicken tenders or boneless skinless chicken thighs, your choice)
Marinate several hours (I usually mix this before heading out ot work in the am and it's good when i get home)

Grill or broil chicken
 
These recipes ROCK! Can't wait to try some of these...especially the "fake me" fried chicken with the corn flakes! Thanks everyone!

I didn't marinate, but it worked great. Rolled chicken in corn flakes, baked at 375 for 50 mins. Really good.
 
Chicken and zucchini pasta

I really like this recipe, and if your a fan of pasta you'll find its an easy way to get those veggies and protien as well!

depending on how many your cooking for you can vary your ingredients, it wont hurt the outcome:p

boneless skinless chicken breasts
whole wheat pasta ((spaghetti or linguini) great source of fiber and protien too!))
fresh grated parmesan cheese
fat-free Half n' Half
zucchini and yellow squash
olive oil
pepper

cut zucchini and yellow squash into small halves
cut chicken into small pieces, grill in large skillet with olive oil and pepper
boil pasta while chicken is cooking
when chicken is slightly brown, toss in veggies sautee until all is golden brown,
when pasta is done, drain water and pour in small amount of half n' half
stir in parmesan cheese until melted with pasta (chees will be kinda chunky in spots, which is fine)
serve chicken and zucchini over pasta

and Voila' ! :D

yummy yummy yummy,
the grilled chicken and veggies tastes great with the parmesan cheese!

if you want to use other spices as well you can, just remember that too much will cover up the cheese flavor and the pepper adds to the overall flavor as well.

Simple Simple Simple

I am a simple cooker but taste great and easy!!!!!!!!!

I always bake my chcicken breast a few at a time so I will have a piece for the next day to but I simply buy alot of different seasonings I bake 1 breast with lemon pepper seasoning/the other roasted garlic/and the other with a lite barbque sauce and its really good if you like juicier simply individually wrap them in aluminum foil!
I like the new microwave birds eye mixed veggies and thats dinner!
