Italian sausage, shrooms, beans, sauce 250 cals!

holy moly i had a tasy vegetarian lunch today, another nice alternative to meat just for variety, and it was high in protein. Mushrooms and italian veggie sausage browned in coconut oil, red pepper spicy marinara sauce, a sprinkling of romano cheese, raw green beans, damn it was good! 250 cals or so!

What exactly is Italian Veggie Sausage? I mean, you can't make sausage without animal fat, so that just intrigues me.
 
Note to mod: I am not selling these products! Just providing the links below for informational purposes on their nutrition, taste. There are a variety of veggie sausages on the market, any of which I am sure to be useful. These are the ones I tried and find quite delicious.



140 cals per 'sausage' and very satiating when I brown them in coconut oil with some fresh mushrooms, pour a little spaghetti sauce over it all.

What exactly is Italian Veggie Sausage? I mean, you can't make sausage without animal fat, so that just intrigues me.
