I'm a big fan of smoothies ...
fresh/non concentrated orange juice, frozen berries (fresh is better but handy to have a stock in the freezer, plus avoids adding ice-cream), greek yogurt, honey, banana - all blended)
... and soups
fry onions, potato, fresh veg (e.g celeriac & carrots), tomato in a little oil, and your fav herb maybe. Add stock to cover and a little milk. Simmer till all soft. Blend (or not, if you chop neatly prior to cooking)).
...The soup takes about 5 effort and maybe 25 mins total time. 2 bowlfuls will do for a good hearty lunch, a mug does for a good snack. Will keep in the fridge for a couple of days.
