Is there anything delicious I can do with it? I don't recall ever liking them. But I've been reading that they're way nutritious.

I love sweet potatoes and the beta carotene in them is good for you..

you can bake them like you would a regular tater
Cut them in chunks and roast them with some olive oil and garlic
mash them
add some maple syrup (the pure stuff not the imitation stuff) and bake it for a nice sweet dessert

I've seen soome people add some crushed pineapple and bake with some marshmallows on top (personally i think it's disgusting but to each their own)

my favorite method is just baked - I always hated sweet potatoes because my grandmother and mother always made the casserole with the pineapple and marshmallows - once i learned to do them naked - I loved them

Awesome thanks Maleficent, I happen to have some good olive oil and fresh garlic so I think that may be dinner! Cool!

when i roast them i leave the skin on - and let the orange flesh get a little bit browned... and the garlic gets all roasty toasty goodness :D

OK now i want a sweet tater...

oooh I am actually planning on having one tonight for dinner as well. I like to bake them and then put a little of that imitation butter on it with a half a packet of splenda....it just sweetens it enough to almost make it a dessert and helps my sweet tooth. I never thought of putting garlic on it...that sounds like an interesting combination, I'll have to try it sometime.

haha sorry I got ya craving one ;)

Okay I called my mom and she said that shethinks maybe you mean 350-400 degrees for like 30 mins. for one cubed sweet potato?

Is this the process you would recommend? (I hate wasting food and I'm a bonehead):
1- Wash Sweet Potato
2- Cube SP & Dice Garlic
3- Toss cubes in olive oil w/ garlic
4- Bake ( :) and for how long and what temp if you don't mind please!!! :) ) I will leave the skin on too, I like potato skins. All I have is a glass baking dish.

Mmm... I love sweet potatoes. :) For a quick meal/snack, I will just wash one, poke it with a fork all over, and stick it in the microwave for a few minutes. It has such a nice sweet flavor that I don't even need any butter or sugar on it.

Another fun way to cook it is by making oven fries. Cut it up into small fry shapes. Then spray a baking tray with a no stick spray like Pam. Put the fries in the tray, give them a light spray and stick them in the oven for 30-40 minutes. You can turn them over half way through. You could also do this with a light coating of olive oil, but the spray is lower in fat. They won't be as crispy as deep fried fries, but still tasty.

oven fries are a great way to go ... :) I always forget that method..

and you got the oven temp and time right - though I am the laziest chef int he world I will usually cook everything in my toaster oven so it cooks faster... usually about 350ish for about 25- 30 minutes

I love them this way. Bake the sweet potato until it's quite soft. Cook some finely diced onion and garlic in a pot, add the sweet potato and then mash it, mixing in the onion and garlic well. Add some black pepper at the end. Deeeelicious.

Personally, I just bake them and add cinnamon to it. They are already pretty sweet for me, so there is no need to add any brown sugar or syrup to them. I also do not add butter any more (although I used to).

My 6 year old loves them, and also eats the skin. But of course, this is the same kid that likes to eat the skin of an orange as well. He is a true vegetarian at heart.

I eat tons of them.

But I don't go for taste. I go for time savings, LOL.

Potato, meet pot of boiling water.

Cooked potato, meet my belly. :)

I like to grill them. Find one that's shaped more like a cucumber instead of all pointy, and slice it up into 1" thick slices. Place them over indirect heat, like on the edge of your grill. Make sure the grates are very clean and lightly oiled. It kind of condenses the potatoes and gives it a meaty smoky texture instead of mushy. I like to dip them in A1 sauce or something like Pappy's. They will burn easily if they're on top of a raging heat source, you want the grates to be hot, but not alot of hot air coming straight up to them. You need to flip them every 5 minutes or so.

Sweet potatoes are yum! I personally have them in my salad - I just bung one in the microwave wrapped in cling film and zap it for 3 to 4 minutes. I dice it up and add it to my salads, skin and all...

Another thing, which my dad used to do, is boil them for about 4 minutes, then slice them up and bung them in the oven. Delish.. And much better (looks and taste wise) than ordinary potatoes..

MEEEEEEEEEE too!!!!!!!! I want one. But my way is not so healthy. HAHA. Go to Outback and order a 6 oz sirloin medium, with a sweet potato smothered in butter, cinnimon, and marshmallow. HHHmmmmmm.

Though I do like them baked as fries, sprinkled with a little cinnimon. I think sweet pototoes are sooo yummy.

Now, I have two questions... 1. is a sweet potato a yam, or is that a totally different thing?.... 2. how do you bung something?
