Hummus

From the Barefoot Contessa Cookbook, by Ina Garten

2 cups canned chick-peas, drained, liquid reserved
1 1/2 teaspoons kosher salt
4 garlic cloves, minced
1/3 cup tahini (sesame paste)
6 tablespoons lemon juice, freshly squeezed
2 tablespoons water
8 dashes Tabasco sauce

Place all the ingredients in the bowl of a food processor fitted with a steel blade.
Process until the hummus is coarsely puréed.
Taste for seasoning and serve chilled or at room temperature. Yields 2 cups.

This stuff is delicious - have made it many times and liked it.
 
I have never in my life had hummus. I almost bought some today but have no idea if I will like it or not. What does it taste like?
 
Hummus is great. When I boil eggs, I cut them in half to remove the yolks and stuff them with hummus instead. It porves to be a very tasty snack when on the go. I will have to give this recipe a try. Thanks Stingo.

Hmm well... it tastes like... hummus lol - chickpeas, sesame paste, lemon juice, garlic and kosher salt... If you like chickpeas and you like garlic, you'll enjoy this recipe I think.
 
I don't know how to explain the taste of it. It's kindof like cottage cheese, either you like it or you don't. Just buy it at the store one day and see for yourself. That's what I had to do. At Walmart, they have original flavor and spicy three pepper. I went for the three pepper. Stingo's reciepe sounds good or you can go to http://www.recipezaar.com/ to find other recipes.
 
That's so funny, I never really knew what hummus actually was...I just like it LOL. There is an Armenian restaurant I like going to and they make THE best hummus I've ever had YUM!

Hummus is pureed chickpeas, tahini (sesame paste), lemon, salt, (and in the version I have above, garlic)... Usually eaten with pita bread (and is quite tasty, and healthy for you).
 
Since you mentioned pita bread, I have a question (hehe), what is pita bread exactly? It is just like a biscuit? Or more cracker like? I've been meaning to purchase some hummus, however am not sure of what to put it on.

Hmm, I'd say neither, as it's not crunchy, but more of a flatbread. The wikipedia has an entry on it though.
 
On second thought - don't listen to me because I have no idea lol... Do read the article though and form your own opinion.
 
I like it

After I read this thread I had to check out Hummus and especially since I read an online article that a person could eat Hummus and celery while detoxing. I went to the store and bought Hummus roasted garlic kind. It is hard to explain the taste but the texture is a paste. I never liked chickpeas, but for some reason I like Hummus. I would have to say go out and try it if your curious.
 
HUmmus is great. I love it. I use it as a dip with veggies.
