Homemade soup?

I love soup. I use a soup base called nutrimax, is vegitarian but they have chicken and beef flavors as well as a veggie one. I just make my base according to direction and add my veggies, sometimes I use frozen and I also had a can of bean salad (mixed beans). I also love to use brown rice or lentils too.

Also I find you can't go wrong using a crock pot for making your soups.

i don't necessarily have a "recipie" because I kind of made this one up as I went... but i took beef flavored broth (chicken would work too) that was very low-cal (only 10 per cup!)... and i added chopped carrots, celery, corn, edamame - basically whatever veggies you like, and cooked it until the carrots were done enough. Add spices like sage, basil, oregano, salt and pepper... you could also add some noodles if you want - but you don't have to =)

This may sound a little odd at first, but it's very easy and frugal. I just throw whatever leftover veggies and beans I have in a freezer bag for a couple of weeks, like corn, carrots, potatoes, beans, onions, peppers, just everything and when I have enough or feel like having soup, I throw it in a pot with some low sodium chicken broth and any leftover meat if I feel like meat and either rice or pasta, depending on what I feel like. Cook it all up, doesn't take long since the veggies and stuff are already cooked. Season to taste, also depending on what you feel like, you can add soy sauce if you want something asian, or curry if you want something spicy, italian season is great especially if you add a can of chopped tomatoes, it makes it like a minestrone soup.

More like a homemade beef stew

Beef (chunks)...you know, the kind used for stews.
frozen vegetables
can of stewed tomatoes
can of corn
tomato paste (maybe 2 cans)
tomato sauce (maybe two cans)

Boil the beef in a larget pot of water. When done, add the mixed vegetables, corn, stewed tomatoes, tomatoe paste, and tomatoe sauce. Cook for another 20 to 30 minutes and you are done.

You can add salt and pepper to taste if you would like.

I just made a chicken vegetable soup (similar to the ones above), and for the first time, I added a few finely chopped cloves of garlic. Can you say YUMMY?!

chopped cloves of garlic

oh I hate not being able to have garlic.....

The good thing about soups are you don't need much of a recipe.

our favorite is

spicy sausage, onion, poblano pepper, hominy, tomato low sodium chicken broth and water.
if the normal sausage has too many calories find a lean turkey or chicken sausage.

It is just seasoned with salt, black pepper, cumin, oregano, cilantro and coriander.
after it is in the bowl just top with a small squeeze of lime.

I saw a recipe for a soup in an old issue of Canadian Living for a squash, lentil and chickpea soup. Looked really good....maybe I'll find it and post it. The others that people suggested sound great too...yummy..Makes me wish I had time to cook...
