Yes, a high-protein diet is excellent for fat loss - but you cannot avoid carbs or fats - they are also essential for fat loss; it's all about eating a well-balanced diet.
You should be eating 5-7 meals, roughly the same size calorie-wise, with a serving of protein with each (chicken, lean lean beef, canned tuna, egg whites, protein powders).
That being said, don't concern yourself with "snacks" - you'll be eating frequently enough to avoid feeling hungry ever and wanting to "snack."
Peanut butter is fat - but it's good fat. Be sure to use only natural PB, though, to avoid excess sugars and trans fats. I would personally avoid the crackers, though - they are not clean and most crackers contain partially-hydrogenated oils (trans fats).
Stick with drinking only water and no fast foods - that's a great start.
Here are some clean foods to include in your diet: chicken, lean beef, canned tuna, egg whites, sweet potatoes/yams (baked or steamed only), brown rice, oatmeal (not the instant kind in the packets - they're full of sugar), cream of wheat/rice, cottage cheese, fruits (apples, bananas, berries, oranges, etc.), veggies (spinach, broccoli, peppers, cucumbers, tomatoes, etc.), walnuts, almonds, natural PB
