It almost sounds to me like you're not eating ENOUGH. Eating too little is as bad for losing weight as eating too much. If you drop your calories too drastically, then your body may lose a rush of weight at first, but then your metabolism will slow to compensate for the loss and your weight loss can stall ... sometimes even reverse for a bit.
I think that's also why you might find this has been difficult - because you're depriving yourself too much. You shouldn't have to be hungry or eat tiny little amounts to lose weight.
I also don't see a good balance in what you're eating - there are no healthy fats and healthy fats are essential to being able to absorb nutrition. Fat is not the enemy - it's an important part of your daily diet.
At your current weight, you could lose at a very nice, steady, healthy rate by eating 2200-2500 calories a day. Obviously as you drop weight, you'll want to reduce that, but probably not until you get to around 200 lbs.
Don't be afraid to eat ... and to eat healthy carbs and fats. Learning to eat properly now will also help you when you've reached your goal and you're ready to keep the weight off. That way you don't have to change your whole lifestyle again to go from "dieting" to "maintenance". It's just all part of the whole.
