Eating a majority of your calories later in the day is not going to cause you to retain or gain weight when you're in a calorie deficit.
Especially one as large as the one you're currently in.
You say you're currently sitting at roughly 215 lbs and eating 1900ish calories per day. That's roughly 8 calories per pound of body weight which is quite low given your activity level. Not so low that you need to be concerned but low to the point that you should be losing.
That said, I'd really zero in on how many calories you're *really* eating. Winging it is fine if it's working. In your case it's not which leads us to believe your actual intake is higher than your supposed intake.
And please don't read me wrong... I'm not suggesting you're lying. People in general have a very poor understanding of how much they're actually eating is all.
I'd suggest purchasing an affordable food scale. Digital is nice. And sign yourself up for an account on . Hopefully this will shed some light on your issue.
Really track what's entering your mouth (food and drink including alcohol) for a solid week. Make sure this includes your weekend eating too. And don't behave differently simply b/c you're tracking yourself b/c that wouldn't help us or you uncover the problem and you'll still be spinning your wheels.
Lastly, as noted above, calories aren't the only critical factor. What comprises those calories in terms of macro and micronutrition also matter and you're diet is severely lacking in that department from what I can tell.
Oh yea, and when is the last time you took a break from dieting and exercise?
