Workout Routine Problems

Sorry I didn't know where to put this so it might be in the wrong forum, its more a general gym question than a weight training one...

I need some advice on what to do at my new gym. I've been a member of various gyms for a good few years now but never really got in to going all the time. So I've joined a new one for a fresh start. I've got a program but I don't like it, all regimes I've ever had seem a bit basic and not really tailored to my specific needs....

I was born with bad ankles, lots of operations as a kid etc and it effects what I can do, its also meant that I've got one uncomfortable knee if its overworked. This knee often hurts after using the bike and sometimes cross trainer. I am also overweight which doesn't help, but thats the reason I wanna start getting properly fit and lose some weight. I am following a weight watchers diet and while I've lost about 7lbs in a few weeks I've stopped losing and need to up my exercise.

Basically I just don't know what I can do that won't effect my ankles/knee. It has to be low impact and low pressure. Walking on the treadmill is ok, but running is high impact. The bike is out, and the cross trainer I can't do for too long (10-15mins max). I've read some stuff across the net about using weights and increasing heart rate. This sounds good as I ideally want to tone up and get stronger. But don't know what kinds of stuff to do and whether it should be high reps/low weights or less reps/higher weight??

Sorry for the essay! Any advice would be most appreciated, there seems to be very little help/advice anywhere to help me achieve what I want to.
