This meatloaf combines very lean ground beef, ground turkey and very finely chopped vegetables in equal portions. A generous serving of about 7 oz is only 272 calories!
Grind in a food processor:
2 pieces roman meal bread (whole grain bread)
fresh parsley – enough for about 2 T
take this out and set aside in a big bowl
Chop very finely in a food processor:
5 oz carrots
1 large celery stick
1 small onion
1 pepper (green, red, or other color)
Add the vegetable mixture to the bread crumbs and parsley along with:
1 pound very lean ground beef (170 calories per 4 oz serving)
1 pound ground turkey (160 calories per 4 oz serving)
2 t worchestershire sauce
¼ cup egg substitute
¼ t sage
¼ t thyme
garlic salt, pepper to taste
Mix everything together well. Shape into one large loaf (make it kind of square so your pieces will come out more even) and bake on a broiler pan so the few drippings run off.
350 degrees for 90 minutes. Cut into 6 or 8 servings depending on your level of hunger!
