Good side dishes

I have no problem with the let's say meat and veggie portion of the meal but is there anything else I can have with it. I tried Couscous and that's pretty good but it really doesn't keep well in the fridge. I usually go for Mac and Cheese with pretty much no butter and have that for 3 days. Gets boring after a while. Any suggestions? I tried to search the forums with little success.
 
I assume based on your examples that by "side dish" you mean a starch? Look for a whole grain - brown rice, whole wheat bread, corn tortillas. Tabbouleh, if you like it. Quinoa, if you like it.

I usually just have more veggies, or more protein, or a fruit. But I don't have a huge number of carbs to work with, and I prefer to "spend" them on foods I like better.
 
I usually keep it simple, meaning more veggies. Some of my quick faves are canned and pouch ethnic stuff like Tasty Bite's Punjab Eggplant or Kashmir Spinach. Usually I just slice a medium sized tomato and put an ounce or two of crab meat, real not fake, and top it with a tbsp of FF ranch or french and some garlic pepper. Polenta is another easy side that can be as boring or tasty as you want it to be, some olive oil sauteed mushrooms or zucchini can make a few polenta rounds a very tasty thing, especially if you sprinkle a little parmesan cheese on it. I also eat brown rice prepared with various additives like salsa or fresh onion and tomato. A baked potato topped with some FF sour cream and pico de gallo is a frequent side at my house.

Oh yeah I forgot, we eat a lot of, dolmas, hummus, baba ganouj, mini falafel and cucumber yogurt soup too. A dab of tzatziki on a falafel is pretty darn tasty. I usually just measure out a few tablespoons of hummus and toss a few mini falafel on it, squirt some hot sauce on it and call it done. Falafel King sells a prepared falafel that's something like 45 cal per 3 oz serving and 3-4 mini falafel is roughly 3 oz. I spritz those with a bit of olive oil and heat em up in the oven, tasty. In fact I'll have some tonight. Whole Foods has loads of stuff like that that can be bought on the cheap.

I try to keep it interesting, I'm careful to measure out and account for condiments I add to my sides, if I put 1/4 tsp of parmesan cheese or a tbsp of FF ranch on something I log it.

Side Dishes

I am the worst person when it comes to cooking dinner. I'm good with the meat, it's just that when it comes down to side dish(es), I'm clueless.

In my family, we always had veggy's and mashed potatoes. Well, I'm ready for something different.

What do you have as side dishes. Please name all!
 
I like Risotto as a side dish (light version)
Grilled onion and peppers.
Baked red potato chunks with (light) ginger dressing
Thin cut cucumbers with that vinegar dressing.

Depending on what I'm making for dinner, I'll add fruit, veggies, or a starch.
Examples: Fajita night I added
mango and avocado salsa (awesome)
refried beans

Chicken night
baked red potatoes w/olive oil
roasted veges like brocc., cauli., carrots and green peppers

I also love baked apples, black bean soup, mashed sweet potatoes, zucchini fries, V-8 juice, hummus and wheat pita chips(baked), whole grain rice, baked bananas, etc. I usually choose my side by the season! I live in WI. and during the winter months, I buy what's available.
