This is way easy to make so I had to label it "ghetto". This may be an "official" recipe, but I just made it up so I figured I'd share.
4 tilapia fillets
3 cups cooked basmati rice
1 large can diced tomatoes
1 regular can green beans or okra
Tony Chachere's spice and herbs seasoning
canola oil
Start cooking the rice as directed on the package. Heat up a cast iron skillet, or whatever else you've got that's the closest to that, with canola oil in it, maybe 1/4" inch. Get it pretty friggin hot. Take the fillets and pat it dry with paper towels. Take some canola oil and brush on the fillets, both sides. Sprinkle the Tony's seasoning on the fillets, both sides, but don't get carried away, this stuff is way salty. Place the fillets into the skillet and cook them in the typical blackening job. While they are cooking, mix up the diced tomatoes and green beans (or okra), and place them into a medium sized sauce pot, or whatever you want to call a pot just big enough to hold that much food. Heat it up and season with the Tony's to taste. So, when all this stuff is done, take the rice and spread it out over the plates, then spread the tomato and bean/okra/tony's mixture over the rice. Place a fillet over the rice/tomatoes/beans/tony's. It's some good stuff. Serves 4.
