Getting back on track after 2 weeks of eating really bad!!!

Well finals are over, and I did really good... but I just went out of control with my diet and didn't exercise anything, so I probably gained all the pounds that my ticker says.. I'll try to start with cardio tomorrow at the gym. Another thing is that I'll be cooking from now on because the cafeteria is now closed... I've bought a couple of things like chicken, cottage cheese... but I can't eat that everyday. I'm a beginner cook (male) and I really don't know what else I could cook for myself that it isn't complicated. I'd appreciate if anyone could hook me up with some recipes that aren't too hard to make.

Another thing is that I'd like to do all my cooking on weekends and then just microwave it, because I'll be taking classes and studying and it would be more convenient for me. I know this is not as good as cooking everyday, but is this possible or do you loose to many nutrients, etc....

I know you asked for recipes but I wanted to chime in with something that may be more helpful... you said you are going to start back with the cardio, I just wanted to point out that you DEFINITELY want to be lifting weights regularly. If I was forced to pick which is more important for fat loss, I would have to say weight lifting.

If one were to rely on a great diet plus weight lifting, one would get very far.

Of course adding in cardio is a total bonus on top of that.

But if you are lifting weights then good on ya!!

One of my favs is Chicken Pasta Primavera.

Boil some chicken breast & chop them into bite sized pieces. Boil some pasta (I use the wagon wheel kind), then in a stir fry pan, add in a few Tbsp of oil, soy sauce & as much chopped up garlic as you liken.. I love it & its good for you, but some people might not want a lot because of the smell. Then when that gets hot add in chopped broccoli, carrots, really any veg you like. Cook them until they are tender, add in the chicken so it can soak up some of the garlic, soy, oil flavor... & heat it all up.. Then toss it with the pasta.
Sprinkle a lil parmesan cheese on top when you put it in your bowl.. just a lil for taste.

I will reheat this for days.

My best advice... go online, to the library or where ever & find some recipes & just try them... No ONE ever learned to cook without a few inedible meal mistakes. You learn. I'm just impressed you are trying.

My advice to you? Invest in a grill pan!! They're awesome, I don't even use my regular pots and pans now.

I don't know how big a fan of veggies you are, but yellow squash and red peppers taste awesome when they're grilled.

I mix about 2 tbsp of extra virgin olive oil (beneficial fat) with a little less than 1/4 cup of white cooking wine, chop up some fresh garlic and basil, and sprinkle some cracked pepper into all that.

Slice up two of each veggie (you can do more at a time, but it's harder to fit them all flat on the pan) and shake it all up in a ziploc freezer bag. Throw 'em in the fridge for as long as you can wait, but an hour usually does the trick.

After they've laid flat on the grill pan for a while, check to see they've got brown grillmarks, then flip 'em.

I make this almost every night and throw it in some tupperware and take it into work the next morning. Tastes just fine zapped in the microwave.
 
Hi there, I am with you man. I really don't know how to cook "healthy' food. So i've been eating alot of chicken breast and broccoli. I would love to find recipes for different options, oh and remember you only fail when you stop trying. Nothing like feeling like you can't go on anymore and bam! Something extremely positive happens.
