I found this article in this months womans day mag.

THE TRUTH IS....

By the time fruits and veggies....fresh, frozen or canned....reach the table, they all have the same amt of nutrients and fiber. Even in fresh foods, many nutrients are lost during cooking or while sitting in the fridge. Also, some nutrients, including beta-carotene and lycopene, are better absorbed from canned foods. However, if you're watching your salt intake, be sure to choose sodium-free canned products.
 
that's interesting - i knew it was true of frozen - especially fruit because it's not spending days on trucks being shipped to you - it gets frozen pretty quickly so it loses nothing.. .

I've never been a fan of canned vegetables (it's a texture thing) but i had no idea they were as good as fresh.. :D good to know

Yea, that surprised me too....I'm glad though :) I don't feel so guilty for serving canned veggies now, lol
 
LOL @ newbride's fading guilt. I pretty much figured this, the only thing that has kept me from canned stuff as of late is the sodium. They put SO much in them when they're canned to perseve them. Makes my head hurt just thinking about it.

I also heard that fresh fruits start losing their nutrients during shipment. And yeah, that basically all veggies/fruits canned or otherwise have the same nutrients. Thanks for the article.
