Flumes Journal....

I see quite often where you have a snack of chicken breast - do you just have fully cooked chicken breasts sitting in the fridge as leftovers or are you actually cooking them at the time you want to eat them? Lately when I make grilled chicken for the family, I cook a TON so that there are lots of leftovers. Part of them I make into chicken pasta alfredo with broccoli the next day for the family, but most of the leftovers I've been hiding in the freezer for myself. On the nights when everyone else wants to eat pizza or hot dogs with mac and cheese, I take out a nice healthy grilled chicken breast. They just don't taste as good as they do fresh if I eat them plain though. And the texture seems weird to me. But I invented this concoction that I make where they taste awesome where I toss 1 to 2 oz chopped grilled chicken, 1/4 cup brown rice, half a cup of each chopped veggie (onion, carrots, celery, and broccoli) and I toss in a few chopped green peppers if I have them. Add all season salt, chicken bullion cube (crushed), minced garlic and onion powder and cover with plastic wrap and toss it in the microwave. I cook a couple minutes, stir, cook a couple more, stir, etc. till the rice is done to my liking and by then the veggies are soft too.

So I'm just curious how you prepare your chicken breasts - or are they just leftovers?

Well....I prepare a pile of em like you do. (Living on a border town to the US allows me to take advantage of your ridiculously low priced breasts....$1.77/lb for boneless skinless. Thats unheard of here. )
Anyways....I do about 5 lbs of them on the bbq, or oven or in the pressure cooker. I like to soak them in brine/with seasoning for a few hours before cooking so they get some flavour on the inside.
Also...we got this stuff called sriracha sauce...its a little on the hot side but its good...specially with shrimp and chicken.

Like yourself, I find the chicken goes 'funny' when its reheated....but I'm a carnivore and I can deal with it. So I munch on a nuked breast for a snack...or cut up a breast and make a quick broth so it gets tender....or I chop one up in a salad, or slice one up in a wrap with some veggies, or wife will do a stir fry. I really like them pressure cooked....the pressure seems to inject the sriacha sauce flavour right into them.

Anyways....thats it in a nutshell. Healthy, quick and filling.

If I come up with any new way to enjoy them, I'll post.

Today was a good day.

(Last nite was better....took the kids to the cottage and promised them we were going to take care of a few geese that have made our front lawn their habitat. (Im licensed and they are in season here now) So...when we got there, of course there was no geese around....but while cookin dinner (bbq on the deck)....a flock of them swam in front of the camp.

The kids were vibrating but I told them they had to stay in the cottage until after I shot. I ran to the lake's edge took three quick shots which dropped two of the geese. The kids bolted out of the camp and ran to the lake (already suited in their swimming trunks of course). Marc the oldest (9yrs old) outran the two dogs, (one which cost me $1300 to do just that!!!) and jumped in the water to retrieve one of the geese. The youngest jumped in to get the other downed goose. Their faces had teeth from ear to ear! It was the first 'hunting trip' they ever had that we actually got something.)

So...guess what I had for supper tonite??? Yup. Canada Goose!

I cleaned them late last nite and put them in a brine solution to soak overnite. Then this afternoon, I cooked them for an hour in the pressure cooker with some apples, peaches, and some poultry seasoning.
They turned out awesome. Had goose with sweet potato and some mixed veggies for supper.

Just had to share that.

Working all weekend...dreaded nites so I hope to keep the munchin' to a minimum. Lotsa fruits and tuna :)

When I was young, my dad never hunted....I picked it up on my own when I got older and learned a few things here and there. Watchin the kids get as excited as they do whenever I take out a gun or take them to the range is just as rewarding for me. It's sooo cool. I hope they remember it forever.

As for taking care of the geese.....they are considered pests here. All they do is eat and crap....eat and crap....and eat and crap. Its disgusting and soo bad, you wouldnt want to walk barefoot across the lawn to get to the beach.
As a kid, I loved going to the park and feeding them. But as I get older, I find they are a nuisance. (I'm going to be a miserable ol fart someday! lol)

I hear you about the geese being a pest. Deer and pheasants are problems around here. Back when I was an idealistic teen I thought hunting was wrong, especially if you are killing Bambi or his mother. But now that I've had numerous cars wrecked by wildlife, plus have to deal with the mess they make in our hay, I say shoot 'em all!

I like to cook....probably because I like to eat. And frankly, given the choice...I'ld rather cook than have someone cook for me.
(I also do most of the grocery shoppin....cause you cant cook somethin ya aint got! lol)

I say shoot 'em all!

Well...food wise, it was a crappy weekend.

Ate a small pizza in one sitting. I have no idea what the hell I was thinkin.
Boredom at work I guess.
Did I mention hostess cupcake? Bag of chips? (ok it was only a few handfuls but I could have polished it off if they werent soo friggin salty!)
Friday I weighed in at 200.4....Yesterday was 204.2 Aye karumba!

I gotta give my head a shake.....looks like I'm drifting into my ol ways.

So today is a new day. (I have a feeling you're going to be hearing it alot lol)

Going to get some healthy snacks and pinch myself whenever I go for something unhealthy! lol

Off for a couple of days now. Weather is cool/cold and leaves are changin colours here. Hopefully the guy will start shingling the cottage today...and that means I'll be busy helpin. (not lookin forward to that)

That's kinda cool! I'll have to remember that one.

I had a crappy food weekend too - and what a coincedence! I went up 4 lbs on the scale too! I'm sure you'll be back down to where you were before in a day or 2 because it sounds like you ate some salty stuff to make you retain water. At least that's my theory because I KNOW I did not eat enough calories to gain 4 lbs of fat (that would be 14000 extra cals!).

Even though I mentally prepare myself for a bad number on the scale because I've eaten too many salty foods, it's still such a downer to actually see that number go up. I've sometimes thought that maybe I should eat a lot of salt every day so my weight is more constant? It would be easier for the old self esteem I think. Maybe not so good for the heart and blood pressure...
 
Hi. Thanks for the encouraging words in my journal. Boy, do I ever understand about going back to "old ways"! What is it about certain food that has such a pull over us? Anyway, I am back on the wagon, hoping to have a good weekend. I hope you have one too!

Thanks Eycky! But believe me...I have been a busy beaver over here.

Over the past week, I have worked 4 12 hour regular shifts, shingled the cottage roof, and then worked an overtime shift, (which wasn't just sitting on my butt like I normally do.) As Jjjay would say...I am knackered! Honestly, I have no energy right now, and tommorow I go back on night shifts...(hopefully quiet shifts).
Kids also have a motorbike now, (which took almost every moment of free time to get going...although their smiles made it worth it).
So, please give me a rain check on the butt kicking and I'll take you up on it on Wednesday k? Should be my first quiet day in a while...so no excuses not getting to the gym!

Food lately has been questionable. Not the best choices....but I have been cautious and eating in moderation. I can't go into detail cause my eyes are closin fast but stuff like spaghetti and meatballs, burgers and fries and chinese are what I can remember. Tomorrow should be better....I have nothing to do but rest, (I hope).

Hope you all are doing great and hope to catch up on a bunch of threads tomorrow.

Wow you have been busy. Any moving is exercise and roof shingling sounds like great exercise.
I bet when you ate things that weren't so healthy you only had a fraction of what you would have had before.

You sound like a regular Mr. Do-it-yourself! That's pretty much how we are here too - saves LOADS of money that way!

And just like getting in a good work out, the feeling of accomplishment at the end of the day is AWESOME!

Too bad hubby and I can't seem to remember that right now since our old house (which we still own) needs to be re-shingled badly!
 
No rest here yet. Two crappy nite shifts and then running around during the day shopping for the guys hunting trip. (Im not goin this year....but I still organize most of it for them)

Should be a little more relaxed tomorrow. Couple of days off with little to do, (hopefully).

Food wise lately has been a little better. Except for the 6 chocolate chip cookies I had for desert tonite :banghead:Oh well....i don't do it often lol. Damn they were good tho lol.

Today:
Oatmeal Breakfast
2 pieces of cheese for lunch <I know I know>
1 sausage 1 cup of rice and about 1/2 small broccoli head for supper
6 friggin cookies

Im workin nites tonite so I got to keep the snackin to a minimum. Got some tuna, some fruit, (Im outta cookies thank god!) lotsa water and a diet pepsi for an immitation sugar fix. Should be good to go.

Tomorrow, I'm going to the gym for a long awaited work out. Then, I'm going to the cottage and let the kids race around on the motorbike. (They have been asking everyday to go out there since we got it and I should spend some time with them and let them go wild).

On another good note, my youngest son got drafted to the 'B' Division in his hockey league...(A is la creme de la creme, B is middle and C is bottom of barrel so to speak) and we are very very happy for him. He was so dissapointed when he didnt make 'A' Division, but now learned that none of his friends made it to A either. (So that was a relief for him).

I guess thats all I have to report. Leaves are all changing colour here and the temps are cooling off at nite. I'll take a pic if its sunny tomorrow.

Oh. Forgot to mention... 201.2 this morning. Slowly but surely....200 is within reach again!
