I see quite often where you have a snack of chicken breast - do you just have fully cooked chicken breasts sitting in the fridge as leftovers or are you actually cooking them at the time you want to eat them? Lately when I make grilled chicken for the family, I cook a TON so that there are lots of leftovers. Part of them I make into chicken pasta alfredo with broccoli the next day for the family, but most of the leftovers I've been hiding in the freezer for myself. On the nights when everyone else wants to eat pizza or hot dogs with mac and cheese, I take out a nice healthy grilled chicken breast. They just don't taste as good as they do fresh if I eat them plain though. And the texture seems weird to me. But I invented this concoction that I make where they taste awesome where I toss 1 to 2 oz chopped grilled chicken, 1/4 cup brown rice, half a cup of each chopped veggie (onion, carrots, celery, and broccoli) and I toss in a few chopped green peppers if I have them. Add all season salt, chicken bullion cube (crushed), minced garlic and onion powder and cover with plastic wrap and toss it in the microwave. I cook a couple minutes, stir, cook a couple more, stir, etc. till the rice is done to my liking and by then the veggies are soft too.
So I'm just curious how you prepare your chicken breasts - or are they just leftovers?
