Comfort Style Parmesan Chicken

~Stacy's Comfort Style Parmesan Chicken.~

This is for boneless/skinless chicken breasts.
{You can also use boneless/skinless tenders}

In a bowl add 1/2 C. Light/FF Mayo - Sprinkle in lightly{I go from one end of bowl to the other while sprinkling.} these spices:

Garlic Powder, Celery Salt, Pepper, Oregano, & Dried Parsley.
Also add in 1 tsp. basil, 1/8 tsp. of thyme, and 1 tbs. 1% milk.

Mix well with a spoon. Set aside.

In a pie plate/other; Add 1/2 a canister of reduced fat grated parmesan cheese and a few tbs. of dried parsley. Mix with a fork to rid lumps and make a dusting powder.

I also sprinkled in some pepper.

Pre-Heat Oven to 400* Lightly spray a baking dish with extra virgin olive oil spray. {This will either be found by the olive oil or other cooking sprays}

Baste both sides of chicken breasts with mayo mixture and then dust both sides with Parmesan mixture.
Place on baking dish.

Bake uncovered for 20 - 25 mins.
{Until no longer pink/cooked through.}

So tender and just awesome - savory flavor.
 
That sounds yummily delicious, except I don't eat mayo. Anything you could substitute you think? I always have trouble figuring out what to do with boneless chicken breasts..

NO NO NO NO and NO _ that's cardboard - real Parmesan cheese doesn't have that much fat or calories and you need much less for SOOOO Much more flavor - Throw out that CRAP in the can RIGHT NOW!!! get the real stuff -your taste buds will thank you..

blancita, sounds like you're using the mayo to make the seasonings stick - I find mayo revolting - so olive oil would substitute or the chicken is usually wet enough to make it stuff stick

Definetely try the real stuff. My kids like the stuff in the can too but I changed their minds fast when I bought and grated the real stuff.

I make parmesan chicken at our house at least twice a month and I have found through many many different tries that all you really need to do is mix the spices up in the cheese and then rinse your chicken and coat it with the cheese while it is still wet. Spraying the pan with no stick spray helps to add crispness to the chicken and then you are not adding alot of calories and fat that are not needed. Try it sometime and see if your family likes it that way!

In my opinion mayo is only good for making chicken salad!!:rolleyes:

We love it with as well.. As I said, the mayo is not for the spices to stick..

It's for the yummo flavor. :D

Never seen so many mayo haters before! :p
 
Sounds really good I must try and when I run out of the fresh parmesian I have the can stuff for back up but ever since I ate at olive garden(a loooong time ago lol)they came out and freshly grated cheese on my fettuchini and I fell in love a better taste for sure but I like can stuff to both have 20 cals!:)

Oooh yummy! I just made the chicken breast for a nice lunch. Since I dont like mayo (grosses me out..no offense :D), I dipped the chicken into fat free sour cream. For the seasonings, I added dried cilantro, parsley and garlic salt to the cheese. I used the real freshly grated parmesan cheese and coated the chicken good. Only thing missing was the cooking spray that dragonlover recommended, it still came out crispy by wiping some olive oil on the pan with a paper towel, but could've been even better with the spray.

All in all, totally delish! Thanks Stacey.
 
Just wanted to let you know that I made this a few nights ago, and it was so yummy! I used everything like you said in the recipe, including the light mayo, and the chicken was soooo tender and juicy and flavorful! Thank you so much for this recipe!

Sounds yummy - I do a "fried" chicken with parmesan that's pretty good. I will have to give this a try sometime.
 
I made it twice since you posted it and it was so yummy!Also I must add I totally love how it turned golden brown like resteraunt looking chicken the taste was so yummy!

I am addicted to miracle whit well I use LITE for my tuna salad and deviled eggs I love to get it tangy I use Lite miracle whip,1 tbsp of mustard,2-3 cap fulls of vinegar it makes it so tangy I love it as far as sandwhiches MUSTARDS is the only thing I use.Whats weird I used to be the gal that orders XXXX mayo then get 2-4 pks on the side for any sandwhich I eat now I can't stand it on my sandwhiches.
 
I had the chicken AGAIN tonight. I used mostly the canned parmesan because it forms a better crust I think, and I shaved a little fresh parmesan on the cutlets too. They came out so nice..mmmm mmmm.
