Clean Out the Fridge Veggie Soup

Made this on Saturday and it's still quite enjoyable...

1 large sweet onion, cut in large dice
4 - 5 cloves garlic, large chop
1 package of button mushrooms, cut in quarters
1 medium/largish eggplant, unpeeled, cut in chunks
2 smallish zucchini, cut in chunks
1 head romaine lettuce, cut in ribbons (spinach would work too but I had wilting lettuce and at 4 dollars a head I didn't want to throw it out)
1 box, 32 ounces, low sodium chicken broth
1 can, 32 ounces, crushed tomatoes

Put onions and garlic in large pot and sautee til slightly wilted.
Turn heat to lowish.
Add eggplant, mushrooms and zucchini and cover pot about 10 minutes til veggies wilt a bit.
Add stock and stir.
Bring to a simmer
Simmer about 10 minutes,
add tomatoes and lettuce(spinach)
and simmer about 15 minutes.

Serve...

Garish with a generous sprinkling of parmesan cheese and a splash of balsamic vinegar.

Makes a good 6 servings, unless you're me, then it's 3 -4 servings... Mal servings are about 250 calories a bowl...
