Chocolate Zucchini Bread

Mals Chocolate Zucchini Bread
(this makes about 20 servings - you can easily cut the recipe in half - I have ti making on 12 cup bundt pan and one 10 Inch loaf pan)
2 cups all purpose white flour
2 cups whole wheat flour
1 cup sugar
1 cup cocoa powder
4 tsp baking powder
2 tsp baking soda
3 tsp cinnamon
1/2 tsp nutmeg

2 tsp vanilla extract
1 cup apple sauce (apples only in the ingredients - none of the stuff with added sugars)
6 eggs (egg substitutes are fine)
2 cups low fat buttermilk
6 cups shredded zucchini (unpeeled - the color is pretty - squeezed thru some paper towels.

Spray pans with baking spray (or do that grease/flour thing - my lazy butt says bakers joy or pam for baking are the greatest invention ever)

Preheat oven to 350

Combine all dry ingredients (sifting flour -or just pass it thru a strainer)

Combine wet ingredients...

Mix together....

Bake until knife comes out clean...

Servve and enjoy...

(you could dust iwth confectioner's sugar or make a glaze if you desired -my favorite glaze is some godiva dark chocolate liquor mixed with confectioner's sugar poured over the still warm cake so the booze absorbs a little bit (adding in a cup or two of dark chocolate chips owuld also be very decadent... ) and the addition of nuts would also work...
