This one is a good recipe for people who cook up a bunch of boneless skinless chicken breast at the beginning of the week and need a new way to use it. It's also really simple. In fact, I feel bad for calling it a "recipe" since most of it is premixed stuff:
Ingredients:
- Stir Fry vegetable mix. I use:
- Stir Fry sauce. I use (and LOVE):
- Precooked Boneless skinless chicken breast
- Any vegetable oil or cooking spray you like.
You can use whatever amount of each ingredient fits your portion.
I take the vegetables straight from the freezer and start them off at about medium heat in an oiled skillet (or wok if you have one). I cook them until they are about thawed. Then I toss in the chicken and enough Saigon Sizzle to coat everything. It packs a real punch so a little goes a LONG way. Then I turn it up to medium high and toss it around for about 5 minutes. You can probably serve it over rice, but I just eat it alone, because I don't need the carbs and I am eating 5-6 small meals a day, so I don't have a true "dinner".
