Catfish Done Right; Make ahead and freeze

Who doesn't LOVE catfish? Loving catfish is like loving the southern draw, lovin' da 'Nawlins style, heck its like lovin' a pretty lady June. When I think Catfish I think the heart of the south, big open fields on a hot summer day, and ice cold tea in my glass as beads of sweat cover my brow. That brings me to this recipe.

This recipe is for making ahead and freezing. Such a quick and great meal on a long, rough day.

3T Lemon Juice
1t Minced Garlic
2t Olive Oil
1/8t Cayene and salt
4ea Catfish fillets cut crosswise in half
1c Self-rising yellow cornmeal

1 Whisk Lemon Juice, Olive oil, Garlic, Cayenne, Salt. Spread Cornmeal mix over waxed paper. Brush Fillets with with lemon mixture; press fish in corneal to coat. Place fish on clean waxed paper and freeze until hard; seperate and pack into freezer bags.

2 Ready to eat some? Bake at 500f for 18-20 mins until crust is golden brown and fish is opaque at center.

Serving suggestions:
I love fresh green beans or butternut squash with this recipe. If you have a steamer, the beans are done in about the time the time it takes the fish to cook. Imagine, you get home after a 12 hour day, tossing one of these bad boys in the oven and a handful of fresh beans in the steamer and in 20 mins you have a feast!

Whenever making freezer recipes, purchase the ingredients when they are on sale so you get the best deal on the recipe. I only use fresh market fish, i dont expect good results on prepackaged frozen fish, they come out tasting WAY to fish tasting.

This recipe sounds great. My grandpa was from down south so we had catfish alot growing up and my grandma ALWAYS cooked it the same way. This will be a nice change! Thanks
 
I love Catfish.... fried catfish that is, but this recipe looks pretty good. I also don't make fish at home other than shrimp, salmon, lobster once, and the pre packaged stuff like Tuna or other seafood.

What do you look for when buying something like catfish?
 
When buying catfish, there are signals to its freshness:

The flesh should look fresh and slightly moist. It should not be spongy or dry.

The odor should be mild. Avoid catfish with a strong "fishy" smell.

If the head of the catfish is on, the eyes should be clear and protruding

When purchasing catfish already skinned, look for white flesh, with no signs of blood sores or any other blemishes.
