Here is a very easy and tastey recipe. Enjoy!
2 beefsteak tomatoes, cut into thin slices
4oz low fat mozzeralla cheese, cut into thin slices
12 black olives, sliced
8 fresh basil leaves
1 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
salt and pepper to taste
Layer tomatoes, cheese, olives, and basil leaves alternately with last layer of cheese on top (I usually make it 3 slices of tomatoes tall). Place each stack under preheated broiler for 2-3 minutes, or until cheese is melted. Drizzle balsamic vinegar and olive oil and salt and pepper over stacks. Serve warm.
