blueberry recipes

Hmmmmmmmm.....

1) Get blueberries
2) Wash blueberries
3) Eat by handfulls
4) Repeat steps 1-3

LOL!!! Sorry....I LOVE blueberries! I could eat fresh blueberries every day and never tire of them. MMMMMMMMMM!!! And they are one of the healthiest foods you can find!
 
Ok...seriously now...

This isn't really a recipe, but I LOVE angel food cake (homemade- the store bought ones are too tough). I like to half mush up some blueberries and pour them over a slice of angel food cake. VERY low in fat and soooooo yummy!!!
 
i had posted on in here that's very simple and very good.. but a twist on it makes it creamier

in a food processor - blend 1 pint of blueberries, 1/4 cup of water, a squeeze of lemon juice and get it all nice and smooth.. (skin chunks are ok, tehy add fiber) Now swirl abouot 8 table spoons of cool whip -and let freeze..

this make 4 generous servings and is like a blueberry sherbet...

ffreeze them in cupcake tins for perfect portion control.

or are you lookng for muffin/pancake type recipes -i've got those too -- soewhere
 
I love the idea of the blueberry sherbert, but I was wondering if you had ever tried this with other fruits?

I've done it with raspberries and also strawberries... i actually started doing it in the winter with frozen fruit and it's just as yummy that way... depending on how much cool whip you put in -- depends on how creamy it gets.. otherwise it's like teh texture of granita -which is an italian frozen icey dessert...

I was thinking there was simply no way to beat Bep's wash, handful & repeat recipe, but you may have done it ;)

I just recently picked up Cool Whip Free with 15 calories per 2 TBS, which works out to what 60 cs per 1/2 cup!!

Hmmm...looks like another trip to TJ's since I'm out of blueberries!

that would be really good - bananas get a great texture when frozen - -almost ice cream like...

another thought, it adds in some calories but it also adds to the creaminess - instead of the water - add in some vanilla soy milk or even some 2 percent milk (i'm not a big fan of skim, it's like gray water to me but that might work as well)
 
Low Fat Blueberry Scones (5g fat/serv)

Servings: 10
Serving Size: 1 scone

• Cooking oil spray
• 1/4 cup sugar
• 2 cups all purpose flour
• 1 tablespoon baking powder
• 1/4 teaspoon salt
• 1/4 teaspoon baking soda
• 1 tablespoon grated orange zest
• 1/4 cup non saturated fat margarine
• 1/2 cup buttermilk
• 1/4 cup egg substitute or egg whites
• 1 teaspoon vanilla
• 1 cup frozen blueberries
Glaze
• 3/4 cup pwdered sugar
• 1/4 teaspoon grated orange zest
• skim milk

Spray a nonstick cookie sheet with cooking oil spray. In a large mixing bowl, combine sugar, flour, baking powder, salt, baking soda and orange zest. Cut in margarine with a pastry cutter or fork until mixtures forms course crumbs. Stir together egg substitute, buttermilk and vanilla. Add to crumb mixture and stir until just moistened.

Gently transfer dough to a floured board and knead approximately 14 times or until dough is smooth. Form into a 7 inch circle on the cookie sheet and cut into 10 wedges.

Bake at 400 degrees for 15 to 20 minutes. Remove from oven and let cool for 5 minutes.

While scones cool, mix together powdered sugar, orange zest and enough skim milk to form a glaze of drizzling consistency. Drizzle over top of scones and serve warm.
