I haven't made this in a while because I don't eat carbs at night anymmore but for those of you who do, this is a great fulfilling recipe your whole family should like.

1-2 whole chicken breast fillets (depending on the size)
1 brown onion finely chopped
3 crushed cloves of garlic
2 medium chilies finely chopped (optional)
2-3 cups of fresh mixed veggies like brocoli, cauliflower, carrots, celery, spinach and red or green capsicum (peppers)
4 tablespoons of tomato paste
1 can of tomato puree
1-2 sticks or Cassir Cinnamon (very very important to the recipe!!!!!)
1 packet of white or brown Pasta (Penne, Spirals or Macaroni works great for this)
1 cup of mozzarella cheese
1 cup of water


Brown the chicken in a non stick fry pan..if you think you need to, only use olive oil spray.
Remove chicken from the pan and dry fry the onion and garlic for 1-2 minues to release the flavour and then add 1-2 tablespoons of water, just to soften the onions properly.
Return the chicken to the pan with onion and garlic and add the tomato puree and the tomato paste, water and cassir cinnamon sticks and add salt and pepper to taste. simmer for 15-20mins on a low heat and then add the veggies and cook for a further 5 mins.

Boil the pasta until it is almost fully cooked, drain and mix the pasta with the chicken and veggie sauce and stir. Leave to cool for 10-15mins then pour the mixture into an oven safe dish. Cover with mozzerella and bake in the oven until the cheese is melted and browning around the edges!

And that's it!

Erm, nope but i will do one when i get home today and post it up for you.
